Thanks for the suggestions. I need more creativity and ideas on my meals esp those with less preparation time.
The only time where I could prepare a proper dinner would be on non-WO days.
If I workout in the evening, dinner would be quite late, ard 10.30pm or so. So, I'll just prepare sth simple like soup or eggs.
Anytime later than that, I'll take a scoop of casein & almonds before bed.

With low carb, it's pretty easy. Just drop out the starchy foods. But bear in mind that you can't go without some carbs at least. If there's not enough carbs for workouts, you may find that the body is switching to muscle breakdown into fat for energy if you're not careful. With the short period of time, you may have to do some food preparation during the weekend then. I usually try to cook 2-3 dishes over the weekend that can spread the remaining days. I freeze them if I need to. Example is roasted meat or soup.
I just discovered the simplicity of steaming food yesterday and the awful lesson that steam food needs to be removed from the steamer, even if the fire is off else the food becomes overcook. Steaming takes about 10-15 min and you can do multiple ingredient steaming at once. That was the interesting bit. Learnt that from the Japanese diet rules.
