For 3k budget, I suggest you get the M50 + viltrox 23mm f1.4 or sony a6000 + viltrox 23mm used.
Those lens that comes with the camera are called kit lens, they are not that much better than your smartphone lenses. What is it that your smartphone camera cannot do for you that you need to get a dslr camera? If you going to get a kit lens, then you better off saving your money and used that to contribute to your next smartphone upgrade, because kit lens usually are not that much better than your smart phone lenses.
Having used Canon, Sony and Fuji (currently) I can personally vouch for Fujifilm's colour science as THEY ARE AMAZING right out from the camera (JPEG or RAW).
Sure, you can always post process each of your pictures but may be time consuming depending on how picky you are.
Some other considerations for event photography:
For pictures of people, get a good external flash unit with a diffuser of your choice.
Busy background? See if you can squeeze in a 50mm f/1.4 lens to get a shallower depth of field (DOF) to blur the busy background. A 85mm f/1.8 lens would give an even shallower DOF but you need to stand quite a bit back.
Otherwise, an all rounder would be a zoom lens or a kit lens that comes with the camera (must have image stabilisation!). If budget permits, see if you can get a zoom lens with a bigger aperture like the Fuji 18-55mm with f/2.8-4 aperture (not sure what are the prices right now).
For inanimate objects like the finer details.. pictures of food, gifts, flowers, etc, a longer focal length is usually desirable to minimize the wide angle distortion which will result in disproportionate size like objects near the lens will appear larger, objects further away will appear much smaller.
