Yes, nowadays hard disk speed can easily exceed 50MB/s (slowest part of the hard disk) so even Gigabit LAN has no problem, the only problem is the NAS network chipset and CPU processing power thats handle the network I/O loads, those are the common bottleneck.
That's correct if you're running 1 or 2 hardisks. But if you start running 4x hardisk, the bottleneck will be the Gigabit LAN.
Wish I'm running 10GBe because my transfers saturate at 120MB/s across my network.

Current in mind have Synology & Qnap,
May be a little late but what budget do you have? The two brands above (even though nice) are VERY expensive and if you're just using it for media / entertainment files, RAID 5 is overkill in my opinion. Setting up the Microserver is super easy actually and very much cheaper. Put an OS in and you should be fine. I have one with 4 x 2TB in RAID 0 setup for space and another eSATA 4 bay casing with 4 x 2TB drives also in RAID 0 connected to it. The Microserver is connected on my home network running Gigabit LAN. Now that I know that the Microserver can be had for RM 900, I'm thinking of getting another.
In my opinion, media / entertainment files do not need redundancy. May be a slight hassle but these files can be downloaded again if required.
