Oh my! Age is catching up on me. It's been quite a chore lately, sometimes wading in the rain going to the post office not to mention the traffic jam and difficulty in finding a parking space (yes, my car is not small tongue.gif ). So, effective from 01-01-2015 I shall go to the post office only ONCE a week, either on Tuesday or Thursday. Yes, I'll continue to share my babies for a little while.

As for my supporters I hope you have been diligently feeding your babies and I trust those little critters have been serving you well keeping you and your family healthy. As the year draws to a close (which has not been a very good year with 3 planes lost and the worsening flood) I wish to thank my supporters for the trust you had in me. Instructions to help you get the best out of your kefir.

NB: 1 tablespoon healthy live milk kefir grains is enough to brew 0.25L (1 cup) of fresh milk in 12 to 24 hours depending on weather.
Fresh Milk must be consumed within 3 (THREE) days or as stated on the milk carton.


The Kefir grains I'm sharing are from my own grains that have multiplied. They are very happy and healthy. These are not dehydrated kefir grains but fresh and healthy grains. They have been grown in a smoke-free and pet-free environment. I am happy to share my babies with others, but I do ask for a small donation to cover my costs and handling, etc.

Kefir is a unique fermented milk drink, (healthier than yoghurt), used for generations in Asia and revered for its health promoting properties. Kefir can be easily incorporated into our daily diet either through drinks or food. Real kefir can be produced only by traditional methods at home and only from original grains. These original grains, slightly yellowish "cauliflower" like are over 5000-year old bacterial culture originating either from the Caucasian Mountains or monasteries in Tibet.

These real kefir grains are complex symbiotic colony containing more than 35 probiotic bacteria proven highly beneficial to humans. The organisms present in kefir, Lactobacillus acidophilus and Bifidobacterium bifidum, have received the most attention by health scientists. These organisms appear to have several effects including: better lactose digestion, control of pathogenic or otherwise undesirable intestinal microorganisms, reduction in blood serum cholesterol, reduction in colon carcinogens, and immune system stimulation to resist infections.

Wherever available in the world, kefir is considered an aid in the therapy of gastrointestinal disorders. It also contains beneficial yeasts, which dominate, control and eliminate destructive pathogenic yeasts in the body. They do so by penetrating the mucosal lining where unhealthy yeast and bacteria reside, forming a virtual SWAT team that housecleans and strengthens the intestines. Hence, the body becomes more efficient in resisting such pathogens as E. coli and intestinal parasites. Evidence of success in such treatment is largely based on centuries of anecdotal observations.

Kefir is very similar to cultured buttermilk, yoghurt or any other fermented milk. Yoghurt contains transient beneficial bacteria that keep the digestive system clean and provide food for the friendly bacteria that reside there. But kefir can actually colonize the intestinal tract, a feat that yoghurt cannot match.

The gross composition and caloric value are very similar to that of milk, except that about one-quarter of the lactose will have been converted to lactic acid. This will be of benefit to lactose-intolerant persons. Furthermore, the bacteria contained in the kefir will provide lactase, the enzyme in short supply in lactose-intolerant individuals.

Homemade kefir is also much healthier than store-bought yoghurt. To quote Heise Health Clinic:-

"You may be as surprised as we were to find that many commercial yogurt producers use pima, an organism which produces slime, to make their yogurt. But why would anyone want to use a slime culture, which has no known health benefits, to make yogurt? The answer is because it’s cheap.

In commercial yogurt production, there is a normal separation process of the yogurt called “watering off.” To avoid this watery separation, the yogurt producers usually add milk solids (from commercial milk) or bean gums to “thicken” their yogurt. But it’s far cheaper to use the slime-producer, pima, to make the yogurt look creamy. In the U.S., this unnatural mixture is allowed to be sold as “yogurt.” No thanks!"

Drug Interactions

Do not use Kefir if you are taking any medications that is known to suppress the immune system. This is due to the fact that Kefir contains live yeast and bacteria. Our bodies' immune systems control bacteria and yeast in our bodies to prevent infection. If you are taking any medication that decreases immune system function (including those with organ transplants), Kefir will increase your chances of getting sick.

Interested. May I know what type of milk( cow, goat, etc.....powdered milk, pasteurized milk, raw/organic milk) you grow your kefir? How long can I keep in the fridge if in the event i ran out of milk?

Hi!

Thank you for your interest.

I prefer not to use raw milk for safety reasons; may be contaminated with bacteria.

I have been using Dutch Lady Fresh Milk and have been enjoying a regular supply of kefir.

I have left the grains in a fresh change of milk for 7 days in the fridge without any problem. Apparently they could last much longer than that but I have yet to try it out.

thanks again for the grains. been making the kefir everyday. seems to only take about 16 hours though for me before it starts to get really seperated from the fermented cheese. thanks again. my girlffriend loves it. seems to have cured some tummy problems shes had for a long time.

Haha! Nice attempt but don't switch to water kefir unless you have excess grains or they may die on you. Let them multiply first; give them a month or so and they will double in quantity. thumbup.gif

Yes the kefir you get is better than store-bought yoghurt. Kefir has been known to treat people with gastrointestinal disorders and IBS. At least it did for me.

Thank you for the update and kind feedback. I'm happy you are benefitting from the kefir. And yes they grow and multiply aggressively since they were from my batch of fresh grains, not stored or frozen. Hmm the grains must love your voice; you could sing to them...haha. Even our wine seems to improve when music was played over one that was left alone.

If you are trying to lose weight try increasing your kefir intake mixed with fruit juice or milk while cutting down on food.

Hi tinypumpkin I'm really interested in ur mkg. I'm staying in sungai petani. Can u poslaju on Friday so that the milk kefir grains come on Saturday? Perhaps ur coming to sp to travel in Saturday and we can COD str8?

And one more thing if I buy 2 tablespoon of milk kefir grains and ferment it in 250 ml of milk will it have double the bacteria??

I could send out the grains on Friday to reach you on Saturday.

No you won't get double the number of bacteria but you will get double the quantity as in the quantity of kefir produced would have doubled if you followed the ratio, if not you are just cutting short the fermentation time. Of course if you consume more kefir the more bacteria you will have in your body. thumbup.gif

I heard of Kefir from a close friend of mine many years ago whose mom had a culture given to her... unfortunately it died! So we knew it was like yoghurt, but there was something like a cauliflower growing in it, and that the fermented milk was really good for health, but thats all we knew. I'm so happy to have come across this thread. I would like to buy some kefir, both the milk and the water ones. Could you tell me what the differences are, should I take both, or just one type and if you have recipes that would be lovely. Please let me know how to pay. Thanks in advance, Erin

Sorry but I have only milk kefir grains. Water kefir grains feed on brown sugar and the kefir produced is fizzy meaning it has alcohol.

jsut received the grains today.. is culturing them. cant wait to see my first batch of kefir... but the grains i received seemed different from my expectations.. my friend cultured milk kefir before and her grains looked like tiny cauliflower.. but the one that i got today was more like sago.. y is that so? anyway, thanks for the kefir..

hi, when i strain the kefir with a sieve the liquid wouldn't flow out of the sieve automatically due to the thickness of the kefir. I thus have to stir it with a spoon and practically force it flow through the sieve... Is that normal?

The culture would be thick because of the curd. Kefir curd is more delicate than yoghurt curd; just stir it up and strain. When you culture for more than 24 hours you will get thicker curd. Kefir is usually due for harvesting after 18 hours when you see tiny pockets of whey. If you leave it longer it will be more sour due to the yeast built up.

Use a strainer that is not too fine if you want easier straining (not coffee strainer). It is perfectly normal for some tiny grains to escape and end up with your kefir; I eat the grains too tongue.gif Gently push the grains around to assist the flow of kefir; don't worry about the tiny ones that escape. Your little critters will grow aggressively if you feed them well. I started with those grains in the first picture (2 tablespoons) and now I have tons of them. biggrin.gif

Hey Tinypumpkin! Sorry for de late feedback. Received it about 2 weeks ago. But i went for travel after cultured for 2 days. Then i left it in the fridge. Jus strained and changed the milk yesterday. I was thinking my kefir must be very sick. But surprisingly it tastes very nice! So now culturing for de 2nd batch. Was wondering how should i determine the healthiness of my kefir? Thx for ur reply.

Kefir grains are very forgiving; they go dormant when kept in the fridge and still give you the lovely kefir when you bring them out and activate them. I'm glad you have found how easy it is to cultivate kefir in your home and at your own convenience.

As to the healthiness of the kefir, I have sent a batch that I had cultivated for 18 hours to the lab and was confirmed to really have lactobacillus.

Hello Missy

First of all you need to determine the length of time that you left the culture to brew. The longer the fermentation the thicker the curd and therefore the harder to strain. If you prefer this texture, meaning it will be more sourish as well, then I suggest you use a strainer with slightly bigger holes.

Another reason could be the milk that you used. I noticed that Farmhouse gave me thicker curds due to the higher fat content. Or the ratio of milk to grains is out; less milk to more grains. The degree of thickness does not mean that your kefir is contaminated. If you see green coloured whey instead of yellowish and clear whey then that could be a sign of contamination. But then again contaminated grains have been known to be brought back to life after several treatments of fresh milk; well, like I said before, kefir grains are very forgiving tongue.gif

If the milk did not ferment and was still watery then your grains are not performing. You are actually doing fine; all you need to do now is to determine what degree of sourness and texture you prefer so that you could time your culture and harvest the good and nice tasting kefir each day. thumbup.gif

Sorry sweety, don't have water kefir grains. But I was told that milk kefir grains could be used to culture water kefir. However they will stop growing, so only use excess grains.

I am new to milk kefir, so hope you don't mind my long list of silly questions. I am from Penang as well and would like to consider buying the grains from you.

1. For 2 table spoon of kefir grain (RM 30), how long will it last.
One table spoon for one cup of milk = one day consumption?

2. The supply you are giving is just the grain only right? And we have to do our own culturing by mixing it with milk?

3. From one or 2 table spoon, can we multiply it? How much can we multiply to?


As I am from Penang, will it be possible for me to collect from you and pay to you directly?

1. The grains will last forever if you take care of them and feed them well.

2. Yes I supply only the grains. You have to culture the kefir yourself using the grains and milk.

3. The grains will grow and multiply but the speed will depend on how often you feed them and take care not to kill them.

Lastly, for privacy reasons I do not conduct COD. I am sharing these grains only when I have excess and my charges are being kept as low as possible.

Should you need further information on caring and culturing of the grains do let me know and I'll be most happy to guide you along even if you sourced the grains elsewhere.

At the moment I have near to zero knowledge on milk kefir and the method on culturing them, I am going to take about a few days to one week to have a better clue first before I buy the grain from you.

I do not want to buy it straightaway in a hurry, and culture it the wrong way killing it, or process the milk wrongly making it stale, etc.

Real kefir can be produced only by traditional methods at home and only from original grains. These original grains, slightly yellowish "cauliflower" like are over 5000-year old bacterial culture originating either from the Caucasian Mountains or monasteries in Tibet. These real kefir grains are complex symbiotic colony containing more than 35 probiotic bacteria proven highly beneficial to humans.  The organisms present in kefir, Lactobacillus acidophilus and Bifidobacterium bifidum, have received the most attention by health scientists. These organisms appear to have several effects including: better lactose digestion, control of pathogenic or otherwise undesirable intestinal microorganisms, reduction in blood serum cholesterol, reduction in colon carcinogens, and immune system stimulation to resist infections.

Wherever available in the world, kefir is considered an aid in the therapy of gastrointestinal disorders.  It also contains beneficial yeasts, which dominate, control and eliminate destructive pathogenic yeasts in the body. They do so by penetrating the mucosal lining where unhealthy yeast and bacteria reside, forming a virtual SWAT team that housecleans and strengthens the intestines. Hence, the body becomes more efficient in resisting such pathogens as E. coli and intestinal parasites. Evidence of success in such treatment is largely based on centuries of anecdotal observations.

Kefir is very similar to cultured buttermilk, yoghurt and any other fermented milk. Yoghurt contains transient beneficial bacteria that keep the digestive system clean and provide food for the friendly bacteria that reside there.  But kefir can actually colonize the intestinal tract, a feat that yoghurt cannot match.  The gross composition and caloric value are very similar to that of milk, except that about one-quarter of the lactose will have been converted to lactic acid. In commercial yogurt production, there is a normal separation process of the yogurt called “watering off.” To avoid this watery separation, the yogurt producers usually add milk solids (from commercial milk) or bean gums to “thicken” their yogurt. But it’s far cheaper to use the slime-producer, pima, to make the yogurt look creamy.  In the U.S., this unnatural mixture is allowed to be sold as “yogurt.” No thanks!"

Drug Interactions

Do not use Kefir if you are taking any medications that is known to suppress the immune system. This is due to the fact that Kefir contains live yeast and bacteria. Our bodies' immune systems control bacteria and yeast in our bodies to prevent infection. If you are taking any medication that decreases immune system function, Kefir will increase your chances of getting sick.

Some medications that may contribute to adverse health effects when combined with Kefir are Zenapax, Deltasone or Orasone and cyclosporin drugs such as Neoral. These are just a few medications, always check with your doctor if you are taking any medication, before supplementing your diet with Kefir.

Do you think is a good idea to add additional bacteria / yeast to the grain? I am thinking to add LactoGG or S. Boularii to clear candida and clostridia. My aim is to multiply probiotics such as LactoGG as it isvery expensive. Thanks

I am not sure if you could multiply probiotics this way but you could try on your excess grains. You can't guage your success unless you sent your kefir to the lab for analysis.

Sure, you could culture water/coconut water kefir using milk grains for a short spell but remember grains fed with non-mammalian milk/water will stop growing and eventually die. The kefir produced may not be so rich with the normal good bacteria that milk kefir has. So please use only excess grains if you wish to experiment.

I sent my kefir to BP Lab for testing and was charged about RM80.00 I think; only tested for lactobacillus. You could call the lab and check with them; only chemical labs conduct food testing. It would be interesting to know so please keep me updated.

These real kefir grains are complex symbiotic colony containing more than 35 probiotic bacteria proven highly beneficial to humans.  The organisms present in kefir, Lactobacillus acidophilus and Bifidobacterium bifidum, have received the most attention by health scientists. These organisms appear to have several effects including: better lactose digestion, control of pathogenic or otherwise undesirable intestinal microorganisms, reduction in blood serum cholesterol, reduction in colon carcinogens, and immune system stimulation to resist infections.

Wherever available in the world, kefir is considered an aid in the therapy of gastrointestinal disorders.  It also contains beneficial yeasts, which dominate, control and eliminate destructive pathogenic yeasts in the body. They do so by penetrating the mucosal lining where unhealthy yeast and bacteria reside, forming a virtual SWAT team that housecleans and strengthens the intestines. Hence, the body becomes more efficient in resisting such pathogens as E. coli and intestinal parasites. Evidence of success in such treatment is largely based on centuries of anecdotal observations.

Kefir is very similar to cultured buttermilk, yoghurt and any other fermented milk. Yoghurt contains transient beneficial bacteria that keep the digestive system clean and provide food for the friendly bacteria that reside there.  But kefir can actually colonize the intestinal tract, a feat that yoghurt cannot match.  The gross composition and caloric value are very similar to that of milk, except that about one-quarter of the lactose will have been converted to lactic acid. "You may be as surprised as we were to find that many commercial yogurt producers use pima, an organism which produces slime, to make their yogurt. But why would anyone want to use a slime culture, which has no known health benefits, to make yogurt? The answer is because it’s cheap.

In commercial yogurt production, there is a normal separation process of the yogurt called “watering off.” To avoid this watery separation, the yogurt producers usually add milk solids (from commercial milk) or bean gums to “thicken” their yogurt. But it’s far cheaper to use the slime-producer, pima, to make the yogurt look creamy.  In the U.S., this unnatural mixture is allowed to be sold as “yogurt.” No thanks!"

Drug Interactions

Do not use Kefir if you are taking any medications that is known to suppress the immune system. This is due to the fact that Kefir contains live yeast and bacteria. Our bodies' immune systems control bacteria and yeast in our bodies to prevent infection. If you are taking any medication that decreases immune system function, Kefir will increase your chances of getting sick.

List Of Medications

Some medications that may contribute to adverse health effects when combined with Kefir are Zenapax, Deltasone or Orasone and cyclosporin drugs such as Neoral. Thank you for your interest.

Kefir grains can be stored in the fridge for about a week until the next brew. I have stored them for almost two weeks without any problem. However, kefir should not be stored too long as it will change its taste since kefir will continue to ferment even when stored in the fridge.

I have started researching about probiotics. But in your post, you mentioned that we have to put the kefir in milk to culture it? How do I let it grow if I dont consume any milk at all?

Of course you can eat the kefir grains if you have excess; they are much better than drinking kefir. tongue.gif

You could give the kefir to your family members and eat the grains yourself. You need to feed the grains so that they grow and multiply.

I've read you can use kefir grains to make coconut milk kefir. You do have to refresh the grains in milk occasionally, since they only grow and thrive in dairy milk. But it's a good alternative to dairy kefir! You'll need to search online to find out more about the method, as I've never done it.

Has anyone ever tried brewing with coconut milk or
soy sweetened milk in packets sold in supermarkets
or home-made unsweetened soy milk?

I've tried brewing with sweetened soy milk & the result
is very good. It took less than 24 hours for the grains to
ferment the milk. It tastes much more sour & the texture
is much creamer & the sweetness has also gone

Give it a try & you'll be loving it

Have also brewed the Kefir grains with Daily Dairy
Full Cream Milk (much cheaper) & it worked equally
as good as Dutch Lady Fresh Milk. Just thought you

Yes, I've received your links on coconut milk kefir.

But unfortunately, I cannot take any coconut-based
products for my IBS as advised by my doctor.

As for dairy milk kefir, it's ok coz it has about 35-50
friendly bacteria & yeast to go into my gut. I'm taking
it everyday & my IBS has shown some improvement-
so far so good. Just thought you might know.

Hey just wanted to let you know the grains are so hardy! I left them in the fridge in a bit of milk for almost a month because i was really busy.. I took them out and made a batch. Took them only a day to return to their normal activeness~ I blend them with banana or any other fruits all the time to make really yummy drinks~ and i make overnight oats using them instead of the greek yogurt the recipe calls for~ really amazing stuff!

Im suffering from GERD now and i heard that taking kefir helps..but one things is that im lactose intolerant, my stomach feel super upset if i take milk...so is ur kefir still suitable for me to use?

Thank you for your interest.

Kefir cured my gerd. biggrin.gif I don't experience the sourish back-flow of stomach juices anymore.

Kefir is said to be suitable for those who are lactose-intolerant since the lactose would have been converted to lactic acid. But please bear in mind that what works for another may not work for you. Kefir should be introduced into your diet very very slowly; spoon by spoon. Stop immediately if you feel discomfort or experience any allergic reaction.

However if you wish to give it a try just PM me your address by this evening as I'm going to the post office early tomorrow morning and could drop you a sample. tongue.gif

Just had the 1st batch ...I use different brand of milk - Farm Fresh .

Since you said it's thicker than milk I would assume that there are curds. Can post pic?

Farmhouse should result in very thick curd. That's why I stopped using farmhouse.

I suggest that you give your culture a few stirs after fermenting for 12 hours to distribute the grains.

Yes , there were curd BUT not nicely form yet . I use FARM FRESH ... I never drink milk , my hubby drinks coffee with just Farm House milk .. but I like Farm Fresh .. dun know why ... lol...hahaha...

i like farm house, farm fresh and gooday! Although its thicker, it has a creamier. more milky taste. I find Dutch Lady too thin and sour.. haha~ My grains never float to the top too all these while but i get curds so there should be no problem smile.gif

The formation of curd depends on how long you culture; also more milk fat will give more solid curd.

If you prefer more sour taste culture it longer. smile.gif

Yup, Farmhouse and Farm Fresh are all good but I don't like Gooday; the kefir tasted awful. blink.gif

The grains are usually distributed all over above the whey. Sometimes the whey stays at the top. Rule of thumb is if you see scattered tiny pockets of whey then it is time for harvest depending on your taste.

The grain is somewhere in the middle & most of it still at the bottom .
But you said :

1. Can the kefir put outside at room temperature ( not inside the fridge ) after straining out the grain ?
If yes , for how long it can stand at room temperature ?

2. You mention that the milk that used to feed the grain while storing in fridge ( not kefiring temporary ) , you mix it with milk to drink , why cannot drink directly ?
Other than that , what other use of it ?
Someone said to cook it , but never say how to cook it , any idea ?
& isn't high temperature will destroy the good bac. ?

You don't have to wash the container each time you harvest the kefir. I wash once a week.

Answer: can be left at room temperature for second fermentation but take note that more than 48 hours of fermentation may cause constipation.

Answer:  can drink it if you like but there is very little fermentation.  Kefir can be used for cooking. Heat will destroy some of the good bacteria but others will still survive.

Longer fermenting time gives thicker curd and more whey. The grains will choose to stay where ever they want to be but who cares as long as they continue to produce the good kefir time after time. tongue.gif

I have to change the milk to Farm House , because Farm Fresh supply unstable & not everywhere can get . But , Farmhouse are easier to get elsewhere . HOPE they can adapt to change food again .

These real kefir grains are complex symbiotic colony containing more than 35 probiotic bacteria proven highly beneficial to humans.  The organisms present in kefir, Lactobacillus acidophilus and Bifidobacterium bifidum, have received the most attention by health scientists. These organisms appear to have several effects including: better lactose digestion, control of pathogenic or otherwise undesirable intestinal microorganisms, reduction in blood serum cholesterol, reduction in colon carcinogens, and immune system stimulation to resist infections.

In commercial yogurt production, there is a normal separation process of the yogurt called “watering off.” To avoid this watery separation, the yogurt producers usually add milk solids (from commercial milk) or bean gums to “thicken” their yogurt. This is your first brew, give it more time especially the air was cool during the night. Give it a few stirs to distribute the grains.

Yup water kefir grains cannot be fed with milk but milk kefir grains could be used to produce water kefir. tongue.gif

Please check back next week as whatever spares that I have are being snapped up immediately and these grains multiply so slowly.

Yes it helps. I was having watery stools and then I would constipate. After taking kefir my stool comes out long and firm and I don't constipate anymore.

Kefir takes care of the gut.

I have gotten the kefir quite some time ago! And thought I would drop by a reply. The grains were wonderful and multiplying so fast!

I have been using excess kefir for masks or for showers. They are absolutely wonderful and even cleared my constipation. I'm looking forward to experimenting with them. And further more pumpkin was super kind and even donate the profit from the kefir to a good cause! She was all so kind and even gave me recipes to try out which turned out wonderful. It arrived in 2 days and fast and great customer service. You won't regret it =) buy some now and share the great and good kefir with your friends and family.

By far my favorite is blue berry kefir smoothie! Have a great day everyone =)

Thank you for your interest.

I have stored the grains with an equal amount of milk in the fridge for more than a week without any problem. If you change the milk every week, they can be stored for three weeks in the fridge. Another forumer has stored the grains for almost a month in the fridge (please refer to post #270). Kefir grains can also be freeze-dried but I have never done that.

You can also air-dry the kefir grains and store them in an envelope, where they will remain dormant but viable for up to a year; I have never tried that. blush.gif

I 've got my Milk Kefir Grain abt 2 hrs ago. Didnt expect to have it today(Sunday). I open up the plastic Poslaju envelope like package.
there's a white envelope inside. Open up the envelope .. there's aluminium packing (smart packaging.. the aluminium protects from bad electro vibration and others - thumbs up to TinyPumkin).. and I did not open up the aluminium packaging yet...to protect those probiotic living organism from unnecessary vibration ....tonight I will start brewing the milk kefir babies under a nice background music and observe as it progress. thumbup.gif thumbup.gif thumbup.gif

hi,

i've received my kefir grains a few weeks back, so just to leave a note here.

i've been introducing kefir into my diet gradually, so far so good! i'm even sharing them with my doggie and kitty, one tablespoon each, and they love it. but hubby is steering clear from them, coz it's too sour for his taste buds.

anyway, i find the kefir tastes better with second fermentation, meaning after we sieve out the grains, instead of keeping the harvested kefir straight into the fridge, i cover it with an air-tight lid and put it at room temperature for a few hours more. then only i pop them into the fridge. i find by doing this, the taste is smoother and it has a slight effervescent taste to it smile.gif

You could churn up some recipes using kefir and your hubby might love them.

When you tighten the lid on the kefir the gas will build up. Careful lest it blows off!

I drink 1 to 2 cups of kefir per day not including the kefir incorporated in my food.

The benefits are not seen immediately; just like consuming vitamin supplements. Kefir works by promoting gut health thereby strengthening the immune system. Culturing kefir requires a small amount of time and effort but the rewards are much much more.

First of all, it's a success for my kefir. I separated the grains into two bottles since i received. Both side were doing well so far.
I did my research and know that fresh kefir should be in cream-white color, just like cauliflower and have to admit that the grains from Tiny were all fresh and happy grains, they start producing kefir like instantly! biggrin.gif
Just one note here, seems that there isn't any instruction saying that we should not close the bottle lid tight (or maybe it was but i missed out), we should leave the lid loose hence explain why Tiny mentioned better to cover with a cloth and securing with rubber band. I confirmed with her through PM.

Just to update here.

Have been cultured for almost a month now. Those milk kefir grains from Tiny is fresh & happy & they multiply fast. Most of the time I only use about 1.5 tablespoon of mk grains to culture & now I have a small rice bowl of grains.

I'm glad that I have come across Milk Kefir. My boy has recently gotten hfmd. But with the milk kefir I consume passing to him through bm, his case was mild & recover fast. He is still active during the sick period. Will continue to culture & trying to pass this good stuff to friends & families.

Good that nothing serious in your diagnosis. Kefir may help but you have to go slow; take a little to get your body accustomed to it then slowly increase your intake.

Thank you for your interest.

Kefir tastes sourish; the longer you culture it the more sour it tastes. You can drink it neat or mixed with fruit juice. The kefir grains that I'm sharing are milk kefir grains; they feed on milk.

Yeah but I was letting it sit for more than a day cause it wasn't sour enough for my taste. Maybe a bit too long.

I should try with less milk so that I can change make it every 12 hours or so.

About a year ago, I had these little babies sitting in my refrigerator. But I left them alone for 3 months or more, which, as a result, they had became harden and turned into dark yellowish. I wonder is it okay for me to culture them back to health at this stage?

And does it have to be cultured in a dark bottle jar with cover as a seal?

Culturing for more than 24 hours will produce a more sour kefir but it should not hinder the growth of your babies. Best to go on a 24-hour cycle.

I'm not sure if they are still alive.

Try rinsing with some milk then culture for 12 hours. Strain and throw away the kefir; then culture with fresh milk again. Repeat this procedure for a couple more times and see if you could get the babies activated.

You don't need to culture in a dark bottle, just place it away from sunlight. I prefer using a hanky secured with a rubber band to prevent tiny insects from crawling in.

It is not advisable to culture it in a glass with a sealed cover because the gas built up may cause the cover to fly off! blush.gif A hanky secured with a rubber band would be more appropriate.

Thanks for the grains ...oh yeah they are very healthy and active! They really do multiply!

My first batch did not seperate into curd and whey after 24 hrs but rather, a thick and creamy yogurt-like drink . nevertheless, I enjoy drinking it . I couldnt bring myself to throw them off tongue.gif gonna whip them with avacado for tomorrow's breakfast.

NB:  1 tablespoon healthy live milk kefir grains is enough to brew 0.25L (1 cup) of fresh milk in 12 to 24 hours depending on weather.
        Fresh Milk must be consumed within 3 (THREE) days or as stated on the milk carton.
The Kefir grains I'm sharing are from my own grains that have multiplied.  They are very happy and healthy.  These are not dehydrated kefir grains but fresh and healthy grains.  They have been grown in a smoke-free and pet-free environment.  I am happy to share my babies with others, but I do ask for a small donation to cover my costs and handling, etc. 

Kefir is a unique fermented milk drink, (healthier than yoghurt), used for generations in Asia and revered for its health promoting properties.  Kefir can be easily incorporated into our daily diet either through drinks or food.  Real kefir can be produced only by traditional methods at home and only from original grains.  These original grains, slightly yellowish "cauliflower" like are over 5000-year old bacterial culture originating either from the Caucasian Mountains or monasteries in Tibet. 

These real kefir grains are complex symbiotic colony containing more than 35 probiotic bacteria proven highly beneficial to humans.  The organisms present in kefir, Lactobacillus acidophilus and Bifidobacterium bifidum, have received the most attention by health scientists. These organisms appear to have several effects including: better lactose digestion, control of pathogenic or otherwise undesirable intestinal microorganisms, reduction in blood serum cholesterol, reduction in colon carcinogens, and immune system stimulation to resist infections.

Wherever available in the world, kefir is considered an aid in the therapy of gastrointestinal disorders.  It also contains beneficial yeasts, which dominate, control and eliminate destructive pathogenic yeasts in the body.  They do so by penetrating the mucosal lining where unhealthy yeast and bacteria reside, forming a virtual SWAT team that housecleans and strengthens the intestines.  Hence, the body becomes more efficient in resisting such pathogens as E. coli and intestinal parasites.  Evidence of success in such treatment is largely based on centuries of anecdotal observations.

Kefir is very similar to cultured buttermilk, yoghurt or any other fermented milk.  Yoghurt contains transient beneficial bacteria that keep the digestive system clean and provide food for the friendly bacteria that reside there.  But kefir can actually colonize the intestinal tract, a feat that yoghurt cannot match. 

The gross composition and caloric value are very similar to that of milk, except that about one-quarter of the lactose will have been converted to lactic acid. This will be of benefit to lactose-intolerant persons.  Furthermore, the bacteria contained in the kefir will provide lactase, the enzyme in short supply in lactose-intolerant individuals. 

Homemade kefir is also much healthier than store-bought yoghurt.  To quote Heise Health Clinic:-

"You may be as surprised as we were to find that many commercial yogurt producers use pima, an organism which produces slime, to make their yogurt. But why would anyone want to use a slime culture, which has no known health benefits, to make yogurt? The answer is because it’s cheap.

In commercial yogurt production, there is a normal separation process of the yogurt called “watering off.” To avoid this watery separation, the yogurt producers usually add milk solids (from commercial milk) or bean gums to “thicken” their yogurt. But it’s far cheaper to use the slime-producer, pima, to make the yogurt look creamy.  In the U.S., this unnatural mixture is allowed to be sold as “yogurt.” No thanks!"

Drug Interactions

Hey~ Just want to let u know i took a long break from making kefir so i put them in some milk and put them in the freezer for more than 6 months! Guess what? I took them out and changed the milk for about 3 times and they are back to work! They really last! I did not expect them to still survive after so long but looks like they are indestructible~! Go kefir!

Thank you for your interest.

Please bear in mind that the milk must be consumed within 3 days once opened. So if you only want to consume 1 cup of kefir per week it would be advisable to freeze the rest of the milk in the carton. Another point to consider is that it may be too little for you to see any benefits; even vitamins need to be taken every day.

Kefir grains can be stored in the fridge for a week or so when you wish to take a break from culturing kefir.

Yes, they are the ones in the chiller; fresh milk or just full cream milk.

Kefir grains can be stored in the fridge in an equal amount of milk to just cover the grains.

If you are worried about the fat content you could use low fat milk but the kefir produced will be thinner. Other types of milk like coconut milk, soya milk, etc can also be used to culture the kefir but they must be revitalised with mammalian milk once every week.

Google and check out more about kefir if you are in doubt; take your time.
