Nope,you cannot just flash eMMC.
eMMC aka the 32GB internal memory contains the /home/ partition which contain applications file.As such you cannot flash the eMMC alone.You can manipulate the size of the partitions without losing data if thats what you want to do.
If you want a stock setting phone I suggest you to use FP Flashing Method B.It'll flash both rootfs & eMMC.

About MeeGo device,I'll take a properly implemented OS over a hard end hardware any day.
Even for desktop PC the devs still yet to take full advantage of multiple CPU core.Not much games utilize the multiple CPU Cores.
N8 is good example of decent OS implementation.The CPU isn't all that powerful but the overall OS functions is quiet fluid.
I don't think hardware spec will be any problem.Most probably it'll have a dual core ARM processor at launching time & eventually Nokia will start using Atom SOC.
I'm still waiting whether Intel can deliver the promised 7 days standby time with moorestown based SOC.If they can deliver it I'll get a Intel CPU based MeeGo phone for sure even if the OS bit "patchy"
N8 actually is not fluid and smooth, the memory usage is very high... and these widgets when you go to Online Mode, it'll consume even more memory. Once you go offline, seems the memory isn't released. ANYWAY, I'm just using the default widget provided when I got the device + cpu and memory monitor. The usage memory usage is over 70%, if I open an app, the usage will shoot up to 90%++. If the usage is over, the phone will hang/soft-reset, all the memory released...
Software can be fixed/enhance, just a matter of how dedicated and fast/proper they do it; But hardware on mobile devices cannot be upgraded, so I'd prefer them to provided a good hardware "at the very least". Like N900, the OS is great, despite there are many things to improve and missing features, but these can be improve/enhance as long as the team continue to develop and support it. Plus, the OS can still be used for future devices, but for hardware, we're stuck. Like N900, if only it comes with MORE ram; but then again, it was a delayed model. Imagine if we can upgrade the hardware like ram, graphics, etc.
OR, there is a new update or replacement for N900 hardware... OR some company managed to create a powerful device which can run Maemo5...
For MeeGo, I would prefer them to provide "at least" a decent hardware specs, plus this is suppose to be a class above those smartphones. It doesn't have to be the latest, but it should have specs that will provide "MORE" than required, NOT "just enough" for DEFAULT settings. Users like to customize, if customization, adding widgets, etc slows down the device or cause not-enough-memory (e.g. N8), then to me, it's a failure.
As I said, hardware on these devices can't be upgraded, so, provide at least "more" than enough or capable for heavy usage/customization, next they can improve on the software optimization.
You can't come up with a perfect OS without testing, usage, etc. Software is improved overtime with new bugs found, new memory leaks discovered, better utilization/optimization, code enhancement, etc. All this require lots of time.
When the hardware is limited, the development team will need to work extra hard to find ways to improve the OS... and with such tie consuming and tedious process, they might only improved a only a little due to the limitation of the hardware, in the end, it's not worth the time and effort spend, especially at these times where technology advances very fast. The development team might just give up and said, it's limited by hardware. Unless this OS is used by many devices, they can optimize easier as new devices are made available, such as Android.
Even for iPhone, they're not going to spend a lot of time optimize for iPhone 2G, or have they stop updating it? It's not worth to spend too much time if the device hardware is so limited, but if the device hardware is good and has potential, the development team will have the dedication/interest/etc to work on it, improve it, optimize it. As what happen to N900, it's a great device, but mainly, it's the OS. If there is a more powerful device that can run this Maemo5, I believe, this will change again.....
For now, let's see what's ahead for MeeGo..........
