which is better? swiss or french? whats the difference anyway ? i thought we will still be learning the same thing . just the syllabus is different only right?
*
This 1 im not sure, im not supporting Taylors(sometimes i do hate Taylors too).
but, in common sense, most of the cuisine/terminology is came from FRENCH.
and if study taylors u gonna learn french....

all of the above is just my 2 cent, although the cert/partner is swiss, all their teaching may be also base on FRENCH.

Cheers mate hope i answer ur Question.

QUOTE(leeo_rifleman @ Feb 5 2009, 03:14 PM)
is there higher diploma in culinary art???? not hospitality, only culinary art in Higher Diploma or Degree...
after i graduate in taylor college in culinary,i want to continue in Thames valley University,London....

how much fee to continue on oversea???
*
most of them is > 100k. i took Le Cordon Bleu and CIA as example. each sem is 30k USD for CIA and 15k AUS for LCB.

But the good thing of this 2 institution is that u could specialize on which department u gonna go for future.(eg pastry,Fine Dinning)

1 of my senior graduated from Diploma, she forward here study by going KDU partnership Uni. which is in Swiss smile.gif

For KDU now they got molecular cooking which is more on using technology cooking type. If not mistaken they going to put choclate work in this syllabus also(not sure which year) I think there still got some difference among colleges, for sure3 difference college provide difference things. For KDU your last sem are working in KDU's cafeteria, which means u are the BOSSS!!!
*
almost the same,
in sem 2 we need to serve all the student, inviting our senior /juniors.
So until sem 3 we finished our restaurant, theres no more serving.
Whew finally.

and now sem 4 we operate our own Pastry shop and target for the profit.

Ill answer accordingly to numbers.

1) French or Chinese?
Both also in a recommended by the world, French u could go to western country learn and Asian country love it.
Chinese Cuisine, u learn from si fu, go to western and open ur own shop = income

I heard rumors, now, the markets wants something special, new, exotic, delicious! something really come fresh to the market!
people now is fusion cuisine, example Chinese mix with western cuisine!

2) Japanese? to answer you is, no. japanese cuisine uh uh... (i would love to learn that as extra knowledge smile.gif)

I could help u with that also, when in the middle of the course u would have industrial Training(IT) u could choose anywhere u want to go, like Shogon Shook, even Jagoya! dont limit ur knowledge, open wide and accept anything!

3) u have to ask University Malaya whether they accept?anyway, why u want to continue from a private to local U?

Best of the Best? Nah.

---------

1) Haha, alot of people asked this question, it depends, u got the business brain or not? hmm? ^^

2) Oenology? nothing is hard if u properly interest go and study it ^^

anyway FYI we make our own wine from grapes smile.gif

3)hmmm, Mentari, not really.... But if u r a girl better stay with some guys together with ur friends.

Safe? i heard alots of news there eventually.
Comfort? Ok ok la, what u pay is what u got.

somewhere near there have new appartment, safer and more comfort but distant is further abit, and it cost more exp than Mentari court(not recommended u to choose there) if u have no choice some tips for u, rent rooms from agent instead from taylors, they charge 200% for the rent and services

Not really French, Chinese cuisine will earn more than French restaurant. depends on where u open.

Furthermore it depends on what u like actually, for me i find it French cuisine is more fancy and proper, somehow i find some of the Chinese technique and equipment is very useful! especialy their Knife! u could cut everything with it! not like French cuisine require >3 knife to cut something.

(french)
De boning, 1 knife
Fish, 1 knife
Chef Knife, 1 knife

(chinese)
Deboning, Fish, Chef, Cut cooked food, 1 KNIFE!

So, guys go into the course and place where u r interest with smile.gif

Good luck Mate

They said that french cuisine is world recognized. but that's just westerner point of view . based on what u said i agree ... french cuisine are more to presentation and all those hanky panky things, while chinese cuisine are more to the technique .. but when u work as kitchen staff under lotsa workload , will you still use 3 different knive to do all those deboning stuff and cutting?

btw, chinese cuisine and pastry chef have kinda high in demand and pay too =) not bad actually . that's one of the chef told me (i type wrong at my previous msg biggrin.gif )

btw, munak991 youre taylor student?

under lotsa workload we still use 3 knife, yeah.

Chinese and Pastry is very demanding in market i think.

To share with you guys base on my EXP.
Hot Kitchen, even if u screw up the dish, u could spin and turn around the ingredients to make the dish nice.
But, in pastry, once screwed is screwed. its permanent

and yeah, im taylors student.

Hmmmmm,
Yes it does!
Base on my learning from oenology, why people drink wine together with eating meal?
well it because it play a role of mixing the taste well together.

i tried so many times i never experience it before.
Most of them cheese goes well with wine.

And the basic is
Lean meat goes well with white wine
whereas
Red Meat goes well with red wine.

So far i tried once! it really suit the taste with the wine!

I went Allergro, my lecturer had a wine tasting in that restaurant for us.
We had a set meal each dish has it own wine ^^

The pumpkin soup really goes well with the wine!
its a twist on my tongue after drinking the soup and a slip of the wine. WOW it really NICE!

Picture ^^ i still have it on my PC lol

what u mean by chef?
Exect chef which would earn lots of $$?
U mean graduated from High Dip then can straight away earn lots of $$?

NO!
U work from the bottom to the top! climb the stair!
Certificate which would be as a prove that u have graduated and certify.
and you will be promoted faster than others that come out just from SPM or none.
u r require to have at least a degree for being promoted to Exect Chef.

FYI
For Exect Chef....
u need to wait until the chef die/retire then only u get promoted as a exect chef.

Cheers mate
