I only know who sells them Slayer...I dunno who uses them. Even if you can find them, who's to say their coffee is any good? And how good are you to know the difference? smile.gif

Funny thing about illy beans they get "stale" 2-3 days after opening. Also they are predominantly chocolate and coco heavy. So it is actually not too bad in your case biggrin.gif

Wow!!! Really really big cans. No wonder you're having problems.

I try to buy from different shops and buy on different days so that I coincide and consume the beans within their optimum time. most of the time fail.. Hahaha

Occasionally I experiment with supermarket beans biggrin.gif

issue with Illy as dwRK had mention they deteriorate fast.
getting a 3kg tin is cheap but beans are stale by the 3rd day and 90% of beans are stale! You are spending RM395.
if you buy 250g u get alot fresher beans but at higher cost

maybe good to look else where to get fresher beans and keeping cost down

If not auresso, try BeanShipper. 1kg bags will be cheaper than 250gm bags. Roasted by decent local roasters, and still testing different ones. Service is excellent so far. Roasters featured are RGB, The Roast Things, Sprezzatura, BEAM, KL Coffee Collective, and Brew&Bread.

Coffex Coffee is another option; cafes like Caffeine; (Mokka) and VCR (Grande) did use their beans (not sure about now). Since you go through 3kg a mth, you could rotate beans.

The above does delivery.

Three little birds/artisan roast do roast in bulk as they supply to many cafes around KL... not too sure if they deliver 3kg, but no harm in asking.

For ppl who can consume a lot like JCogent not hard to clear in 7 days just really depends when coffee gets roasted and how it it takes to get you. If one is buying from U.K., 7 days gone by! Some buy from China when it gets here over 2 weeks flew by. Even can finish in 5 days means little

most ppl are not able to discriminate between 5 day old vs 10mths old when they drinking their fav frap. which is why biz for these chains are good or GREAT.

That machine is not commercial grade, it's a highend home machine. I am surprised they fix it. It's not design to put out so many cups an hour if your cafe is busy.

Was given a breville grinder pro to work with too, well its still under warranty... so as long as the bosses think its fixable, they are gonna fix it.
It still can cope with a slow weekday with maybe an average of 30-40 cups?

But when the weekends come... Oh dear... up to 80 cups a day for a cafe that's not focused on coffee is pretty good eh? (It's a bakery, I had to brainwash the bosses to go specialty coffee so that they can at least serve some on par coffee in kk which is pretty hard to find...speaking of which they were gonna serve the customers boncafe until I went to work at the shop)

I can feel the machine crying though...

haha, dialed in different blends from all over the town (KK) to know enough I guess... but I hope that I can be exposed to more types of SOs and blends from all over the world.
But the coffee scene here just started so.. maybe I'll visit more cafes when I get back to the West this coming month end or maybe when I have the chance to go out and drink more thumbup.gif

I know there's one cafe that is utilizing slayer in S.P right? Maybe will drop by there too.

There's a cafe nearby the town that's using a Synesso hydra brewing a blend from Common Man Coffee Roasters from SG, but..... the only one time I tried the espressos shot, it tasted so sour. The bad kind of sour that is kinda worse than a neat shot of white vinegar, maybe they didn't dial in right that day or my taste is off. Coffee tasting is very subjective and I guess its up to the preferences of a person. doh.gif

and another one that utilizes an Aurelia II T3 , pretty standard decent coffee they are serving.

Just that a slayer will give me more of a headroom to experiment with compared to the Breville setting I am using.. and am also interested to know how will the same beans tastes like pulled from different machines.

Btw, who is selling slayer in Malaysia? Coffex? Because I am dreaming of opening a small cafe around KK employing a slayer within this few years time. Maybe I'll start small with a single group hehe. and hopefully that will add another decent place to get espresso based coffee in KK.

I am using the same grinder in the shop.

How is the shot? too fast? too slow? bitter? sour?

But for my upper burr I am using it on setting 4. 6 is maybe too coarse for the coffee beans you are using. Try changing it to 5 first and then further down for a finer grind.

I used to go all the way down to 1 too when it was on the default setting 5 with the older beans.

Manufacturing tolerances means my #5 can be your #8. No right no wrong...

For proper set up, ignore taste, get it to choke first, then back off to set time and volume...then minor adjustments and dose to set tastes.

PS this grinder is great for coffee, not so good for espresso.

Slayer plus a commercial grade grinder for decaf and regular would run you around RM55k today.

Just a warning....my observations are most shops in KL and PJ are using somewhat stale beans, and the so called barista is not very good.

Also most of the beans used are cheap medium dark blends, for the "strong" coffee preferred by "dumb" locals not exposed to gourmet coffee.

Go to US, Australia, Europe and you will cry when you come back to the local cafe scene. My two favorite beans...an Ethiopian that is literally spicy hot of cinnamon and black pepper, and a light medium Costa Rica natural that is pungent and aromatic with an after taste that lingers for half a day. Only then you'll know...

Very easy to keep to the "rules"... biggrin.gif

Many times to the shops, if they are too old, I walk out empty handed. Friends in SG works in cafe they hand carry back fresh. Know the local roasting schedules. Stop drinking...did this a few times when the stars didn't line up. Couldn't sleep thinking when/where to get the next fix....Hahaha....

yea there is one in S.P FKP . The boss is ang moh and heard from my friend who visited there says that only the cups brew by the boss is good,if brew by the staffs it's quite decent sweat.gif
