1080p vs 1440p, huge difference, it's the pixel count and video size displayed on screen, for 1080p video will fit full screen nicely on 1080p 27" but on 1440p, borders on all side so you see those things much smaller than usual.
This also depends on how far your eye from the screen, 27" 1080p allows you to sit further without straining your eyes to look for the smaller details, 27" 1440p will be a little difficult, but workspace for this much pixels count is nice... IMO.
Youtube video, no, even Intel IGP has no problem doing so.
