just sharing my exp
i'm not interested into geeky mobile phone stuff anymore since 2 years ago i guess.. as i think smartphones nowadays is already stable out of the box, other than that it is just different kind of perceptions
so, my Note 8 is bare stock, taken out of box and i just simply use it like an uncle. so far, it never freeze, nor does i experience annoying lag.. it is not 100% smooth though to be honest, but i believe the slower UI is not due to incapability but rather the way it is designed by samsung (transition and animations etc.). but i do understand last time during geeky days, i've seen how we can get things snappy by modding rom and such, or by using vanilla/ light rom, so i get it. but still it is not something that really bothering. also i think the highest display setting (WQHD+) does chug a lot of processing power, so if lower to FHD+ its breezier. also from years of exp i learned that there are a lot of android apps that are badly written or always does things in background, so this kind of apps can be the precursor to bad performance. just that also since around 2 years ago, i didn't do much on phone except for social apps, internet browsing, youtube, music and organizer, means i have a lot less apps installed, so i think many of those bad apps were avoided, so yeah my Note 8 is just running fine on my daily usage. as you can see spec is top notch, samsung really not kedekut this time, so even if you think the performance is slightly slower, no doubt it is just due to software, so it is something that can be improved (either by samsung update or flashing roms)..
if i may to critic anything, it would be that samsung should not always try to make phone thinner, thinner does not means better, on this Note 8 i actually dislike the pointy feeling on the sides when holding it, due to it is so thin and curvy at the side. not to mention that samsung sacrificed battery capacity over it. i would prefer slightly thicker morphology with more juice.
overall, it is the best phone to date. this is the phone that i imagine it should be since years ago, all box ticked in my wishlist..
im on the same boat as you as well
back 2-3 years ago, as soon as i got my android phone
first thing i do is root, then flash custom kernel in order to gain root, etc
but as years passed, maybe due to age getting a bit older, these are no longer my priority with my gadgets (flashing, rooting, modding, etc)
i started to value the stock experience and started to pay for my own apps that i used to borrow from "uncle jack"

(to remove the ads)
however, back in the day, it is very understandable on why many people prefer to mod android as it was not complete no matter how smooth it was back then with vanilla android.
but starting from marshmallow/nougat, vanilla android is just.. so stable and complete out of the box (unless the OEM screws it up)
everything you need in a phone is basically.. inside of nougat firmware.
to top it off, samsung made the experience even better with their OEM features.
back then, i'd prioritize speed, but now its 2018 already, flagship phones will never go slow no matter coming from which brand..
now i just prioritize the user experience and how the UX serves my purpose or usage.

UX = includes the camera experience as well since you are the USER USING it
i do still tinker around on my android but not out of its capability options (only change things with whatever that is in the settings/developer options)
