Sony a6400 is good. To be honest, it is hard to buy a bad camera these days. When u say 35mm, do you mean apsc 35mm or Full frame 35mm equivalent? If you going to go with 1 lens 1 body, a 23mm, be it sigma or viltrox, would be a better choice. 35mm on apsc (about 50mm Full frame equivalent would be a bit too tight for travel photos). To be honest, for travelling, I would advise a Zoom lens such as the Sigma 18-50 f2.8 instead of a prime.

Since you mention that you're a complete beginner, I would advice you to start small (apsc camera) first even if you can afford full frame. My suggestion would be a Apsc camera + a Fixed variable zoom such as Sigma 18-50 f2.8 + 2 prime lenses such as 35mm and 56mm lens. Since you say you want camera that can take great photos out of the box, then Fujifilm camera will fit the bill nicely. My reasons for telling you to start small is that Full frame camera can be quite overwhelming for you (even if you can afford it). Why deny yourself the joy of the process of learning and upgrading only after you have outgrown your equipments? If you jump right to Full frame from the start, then you have nothing to upgrade to.
Another thing with Full frame camera is that, with such a high price you have paid for it, you will naturally expect a HUGE upgrade in term of image quality compare to your Iphone. But the truth is, if you don't know any editing skills such as Frequency separation, Dodge and Burn and Color grading, your iphone may produce more pleasing photos than your digital camera (be it R6 or Fuji). So, my advice to you similar to trialgone. It is more important to learn proper lighting technique and photo editing skills than getting an expensive camera. If not, you may find yourself letting the camera sit at home collecting dust because it is much easier to take nice photos with your iphone and the digital camera is big and bulky and you need extra efforts to take it out with you while the iphone was always with you wherever you go.
As regards, to future proofing, I can tell you that any recent released camera you buy, can easily last you good for the next 10 years or more. As long as you understand lighting, editing and your camera limitation, you can still take professional photo with a camera that is released more than 10 years ago.
Having said all those above, if you still think you want to get the R6, by all means. Canon camera are well known for producing nice skin tones right out of the box. Just make sure you got some good prime lenses for your portrait such as the Canon RF 50mm f1.8 and the RF 85mm F2. If not, you will surely be disappointed with the kits lens.
