beans contain too much protein, which would cause abnormal growth of shells and keratin parts (beak, nails). there was one sorry SOB from back then who intentionally fed his tortoises with beans just because he likes pyramiding.
ideally, they should be fed with high-fibered plant parts - grass, hibiscus, opuntia (go for spineless/glochidless species such as cochenillifera, ellisiana etc or those with few spines like ficus-indica, robusta, reticulata etc), dandelion, clovers etc.
since most keepers are too busy (read: lazy) to provide those, they improvise by providing mixed market green. adding some hay to the mix would be most beneficial. grass, any kind/mix would be ok as they are naturally grazers (just avoid alfalfa sprouts).
and of course supplements - calcium, D3 (depends on exposure to sunlight/uvb), vitamins etc to compliment their diet.
