You shouldn't need to declare the items you bring as long as they're not dutiable / need to be quarantined. Also, if you're carrying some food stuffs; just tell the custom officers that they're souvenir (omiyage) and they'll usually let it go.

Hmmmm ... I think you can check the prices of the Shinkansen online right? You might want to compare the total price of that against the 14-day pass.
I don't know exactly how much difference in the price it'll be but perhaps others here might have more info?
