I've got the modern steel color on my civic and it does seems to attract more bird poo (study shown that darker colored cars get poo'd on more) than my previous car which was white. In terms of maintainance wise, white isn't too bad to care for, its always the dirt strips that happens to occur below the side mirrors (door panel / front fenders) that will annoy white car owners.
As for coating, I did it with 3M coating and saves alot of time when you wash your car. Even some of the bird poo slides off upon contact or washed away when rained. For me it's worth the investment to protect your car with coating.
Another cheaper alternative is to DIY, get clay bar, glaco windscreen products, and self-coating products (e.g. Soft99 Fusso coat - 12months).

I've got Ceramic Pro on my car. Silver package. If anything, it's good for protection. Bird poop and just about anything else wipes right off with a piece wet tissue paper. Washing the car is also so much easier as the dirt simply falls off. More than that, well....there ain't much. It's mostly for protection. Ceramic Pro does a good job but if you're hard working, you could save the money and wax it yourself. Just my 2 cents.
Thanks for the suggestions folks, it's very helpful. Thanks for introducing Soft99 to me, I was shock about all the reviews online about how useful and reliable it was. If that's the case, I guessed I'll be a happy guy if I were to go with WOP + Soff99 Fusso Coat. Guessed it would be a good combo.
But of course, it will even better if the coating (or detailing) was done by the professional with appropriate equipment, skills and stuff. I second you guys that it will be a worthwhile investment.
Apart of me been thinking to save up those money and spend it on aesthetic mods instead, you know, the usual grille, wrap, body kits and stuffs
