Have you tried frigate nvr, maybe some comparison with viseron?
Frigate just popped up on my youtube and looks interesting and seems easy to setup.
Google coral usb module seems interesting but sold out/not selling here

For smart switches:

Wifi type
1) no need hub
2) requires neutral wire but some don’t (ask seller first) with addition of capacitor

Zigbee type
1) requires hub
2) no neutral wire

Brand:
1) sonoff
2) tuya
3) xiaomi
3) others got but these 3 above are mostly sold here

Which one to pick?
1) if you plan to do automation (trigger motion to activate lights etc) then better stick same brand (controlled by same app)
2) can’t just mix and match?
a. Can but you’ll need something like homeassistant/node red for devices from different brand to communicate with each other
b.Needs more exploring since some coding for the configuration but easy to learn
c. Some flashing firmware/soldering maybe involved but good thing there’s sonoff/tuya component available now

If I’m wrong do correct me pls

Might wanna get smart outlet with rf, at least that way your mom can just use remote to turn on/off instead of having to use apps which annoys parents usually

I don’t see any mention of this yet in home assistant forum, mostly they focus on ble stuff for presence detection

I see, never liked how they limited some device to specific server
It’s quite to install hass, just flash into sdcard, plug in it rpi and you’re good to go
I’d recommend for you to keep the mi gateway at least, since there’s a cheap diy hack using aqara door sensor which you can set as presence sensor on your bed or chair.
Useful to determine people in the room to keep your lights/fan/ac to on/off if they enter/exit

I would't call it perfect but it's easy to implement
There's several methods (load sensor, pressure sensor with esp32) all cheap but aqara main benefit is the battery can last for a long time (i still haven't change mine)

It's a bit of trial and error with HA
For mihome integration into HA (Xiaomi Aqara Gateway component) you'll need to obtain token key which you only get on older version of mihome app ( i think it was july 2020 build or something)
I only realize this after my mihome auto updated to latest version and that option no longer available

As for the google assistant integration, there's the easy way (nobu casa subscription) and not so easy way but free
