When we send our car for service, can we look at it being service or we should just sit kuaikuaily at the waiting room? If cannot watch, meaning we have to take the word of Kia staff that the car is serviced properly and thoroughly?

SC does not encourage owners to be around the service bay for safety reasons but in most cases, they do not prohibit owners who insist on seeing how the servicing is done, if they want to. Some SC may have such prohibition or they may have a disclaimer notice that absolve them from any liabilities in event of any unfortunate accident, as a result of the owner being in the "restricted" area.
Of course, SC would much prefer that they are left by themselves to do the work and not being "supervised." Having said that, it is not to say that SC mechanics would do anything to shortchange the customers while being left alone to carry out their job. It is human nature, that when we are given the space and time, we usually perform better in our work.
And of course, there are occasions, where the presence of the owners at the service bays are necessary to highlight certain issues with regards to malfunction parts or physical imperfection or defects so as to pinpoint the exact problem, hence enabling the mechanics to work directly on those issues.
