As far as I know, if your A500 still on Honeycomb 3.1, no problem rooting. Many methods to root HC 3.1. But if you have updated to official HC 3.2 (via settings systrm update), then the known rooting method that works for HC 3.1 will not work on HC 3.2.
I got my Acer 2 weeks ago, and happily updated to 3.2. Then found out cannot root. Because I wanted to modify system files to make 3G USB work, so I had to flash new ROM with root. Many methods available, but if you want stock HC 3.2 A500 COM_7.006.03_GEN1(like stock Acer ROM including the 3 free games but with root/ superuser kernel included), you can try the methods that I draw up (many hours trial and error and figuring things out)

But flashing a new ROM means all apps you have installed need to be reinstalled again. But its worth it when you can use 3G USB and phone for internet access. Plus you can install some cool apps from App Market that requires root access like Quick Shutdown.
BUT REMEMBER, DO IT AT YOUR OWN RISK. But this is what you can get.
