Best you go shop and see for yourself.
One thing though, is that Sharp is one of the few companies that manufacture their panels in house (Japan in this case), so QC is better. Sony panels are sourced from Samsung atm (IINM, they also have a few Sharp panels here and there).
Sony TVs have more bells and whistles though, and they are easier to adjust (Sony TV can be adjusted in many ways that can make geeks cry out in pleasure)

As far as I know, the only major difference is that HDMI 1.3 supports 7.1 audio, unlike 1.1 and 1.2 that can only carry 5.1 audio max.
Not sure about deep colour, but that also depends on your TV and whether the PS3 supports it.
The 360 only supports 1.2 but the colours in games are similar to that of PS3 games, so I doubt deep colour is a thing you'll miss in a cable.
Just get a HDMI cable made this year, I don't think anyone makes 1.1 and 1.2 cables anymore
