I wonder why many restaurant like to use this kind of fish when they are preparing fish n' chips. It tastes like wet sock. The meat texture feels like tissue paper ya wipe your ass with. The only redemption is the crispy batter with white sauce and lemon, and it still doesn't taste all that good. If you are making one, do yourself a favor. I suggest you go find any mackerel/tenggiri or any other fish.

Dory and patin are related.

mackerel and tenggiri too oily for FnC. best is turbot, haddock, halibut and cod. Hnghhhhh but have to pay extra if you want them.


And also part of the reason why those "Dory" tasted like crap and the texture is poor is because they're frozen and are also not being defrost properly.

Hence easy to blend with any taste it is cooked with.

Tenggiri meat is rough but sweet.

The dory in our region is known as PACIFIC DORY, which is actually a type of CATFISH or aka IKAN PATIN.

The dory in omputeh is a DIFFERENT fish completely, also known as true dory or JOHN DORY.

Ours is a FRESHWATER fish (rivers), the omputeh one is a COASTAL MARINE FISH (sea).

back when im still in college, used to buy dory fillet, defrost it, lightly season with salt and fresh ground black pepper, and fry it in shallow cooking oil.

for the sauce, very simple! diced onions, finely chopped garlic, sautee in in a pan (low fire) with a stick of butter

when the onion turns translucent, dump maggi chilli sauce in it, and 1/4 cup if water with 1 teaspoon of cornstarch. let it thicken, season with salt to ur preference. and pour the sauce on top of the fried fish. garnish with freshly chopped chives

u want easier sauce? 1 clove of garlic, finely chopped, sautee in a stick of butter, take 2 lemons, squeeze the juice, dice the skin, when the garlic brown slightly, dump the lemon juice in it, together with 1/2 cup of white wine.

flambe if possible, when the fire dies, put 2 tablespoon of sugar.

let it thicken, dump the diced lemon skin in, season with salt to ur preference, and pour on top of the fish.

Yeah turbot probably the best white fish for it, but hard to find fish & chippies who use them.

Haddock and cod are usually the most common. Then halibut being the more pricier option.

marketing problem... real john dory memang mahal... but those cheap tesco RM6 per piece dory are pangasius or sutchi "dory". I believe they already send out to manufacturers to label their "dory" appropriately.

He/She expect to pay in worthless Ringgit but get Atlantic Cod fish in local Malaysian restaurants.

What you pay is what you get la.

In some countries you pay US$20 for real lobster burger, you expect to pay RM20 to get lobster burger also in Malaysia. If got also ours might be using fake crab meat for the RM20 one selling at our local shops.

The next compensation for dory would probably be tillapia for Malaysian 3rd world grade fish.

Got one famous shop in Ipoh use Tillapia instead of dory here last time.
