If you ever been to UK, you would know that fish and chips there mostly using haddock or cod.

Kesian wanted to say ppl poorfag but revealed self as poorfag never travel to UK before.

It is expensive fish in others part of the world.
Just like salmon and cod fish here is expensive.
Both fishes have very little or none small bones, that why they like them.

Let me reiterate to you la sohai.

The dory in our region is known as PACIFIC DORY, which is actually a type of CATFISH or aka IKAN PATIN.

The dory in omputeh is a DIFFERENT fish completely, also known as true dory or JOHN DORY.

Ours is a FRESHWATER fish (rivers), the omputeh one is a COASTAL MARINE FISH (sea).

Yeah turbot probably the best white fish for it, but hard to find fish & chippies who use them.

Haddock and cod are usually the most common. Then halibut being the more pricier option.

flambe if possible, when the fire dies, put 2 tablespoon of sugar.

let it thicken, dump the diced lemon skin in,  season with salt to ur preference, and pour on top of the fish.

Btw, traditional fish and chips is served with malt vinegar + salt, thick fat chips, and maybe a side of mushy peas.

Tartar sauce semua tak main la lol.
