its all about the way u cook it...
fry it just like that? of coz itll taste like nothing... but thats the reason it is good with any sauce... back when im still in college, used to buy dory fillet, defrost it, lightly season with salt and fresh ground black pepper, and fry it in shallow cooking oil. for the sauce, very simple! diced onions, finely chopped garlic, sautee in in a pan (low fire) with a stick of butter when the onion turns translucent, dump maggi chilli sauce in it, and 1/4 cup if water with 1 teaspoon of cornstarch. let it thicken, season with salt to ur preference. and pour the sauce on top of the fried fish. garnish with freshly chopped chives nyum! u want easier sauce? 1 clove of garlic, finely chopped, sautee in a stick of butter, take 2 lemons, squeeze the juice, dice the skin, when the garlic brown slightly, dump the lemon juice in it, together with 1/2 cup of white wine. flambe if possible, when the fire dies, put 2 tablespoon of sugar. let it thicken, dump the diced lemon skin in, season with salt to ur preference, and pour on top of the fish. Yeah turbot probably the best white fish for it, but hard to find fish & chippies who use them.And also part of the reason why those "Dory" tasted like crap and the texture is poor is because they're frozen and are also not being defrost properly. Haddock and cod are usually the most common. Then halibut being the more pricier option. |
