if you have the budget.. go for 256... ios will take similar space with ur 6s plus.. picture and video surely will take up space, if you getting 64gb mayb you need to backup to pc for storage

If you plan to use more than 2 years , then 256GB is safer bet.Do take iOS app cache into consideration as they accumulate in size which could go into GB size depends on what app you are using. Only a handful of app able to clear the cache, other you need to delete and reinstall, which mean you will lose all the data.
You will still able to enjoy the phone but there is some maintenance job if you dont mind. I prefer to use the device hassle free.
