Might need sifus here to explain further as I dont use vsync last time, but g-sync are much better solution as it has adaptive framerate, v-sync are limited to 30/60 etc ( IINM ).
I'm not sure but I dont think G-sync will impact your graphic performance.

I viewed one video where they test an OCed i7 2700K ( almost 5 years old CPU ) and it's performance are almost on par with stock i7 skylake

Sadly I will have to upgrade next year, my i5 2500K are too old to be future proof even I run with OC now. The video I saw that had 2600K on par with Skylake are using a really high end DDR3 combo which are expensive, no point for me to invest into old tech, just hope 1070 can last me long as I dont game much now
