Target market. Airport food and merchandise are targeted at those at the airport. A majority of such people would be those waiting for their flights, including those for layovers and connecting flights. This means they practically can't leave the airport and go somewhere to eat and then come back. In essence, such people are trapped in the airport.

If you have a bunch of people rich enough to fly stuck in your premise for hours, you too would take the opportunity to earn as much profit as you can. Airport management knows this, and thus charge their rental accordingly.

It's the same rationale for amusement parks, cinemas and many stadiums. Many such places do not allow outside food or beverages, forcing visitors to purchase from their own stands within.

Airport not only will charge you rental, but will take a big portion of your REVENUE as well.

About 40% afaik.

SO imagine the margin they got there...

airport building costs all inflated. So all these costs passed to consumers in forms of high shop rental.
