Body wise you actually only have two choices: NEX-C3, or NEX-5N, with the 5N being the higher end one. Main differences are 1) Full HD video 2) Magnesium alloy body & Hand grip 3) Electronic ViewFinder compatibility.
The older versions of the NEX are the NEX-3 and NEX-5, which are no longer in production I believe. (citation needed). I will not talk about those here, as the C3 and 5N is a huge jump from those two, although most jargon will apply to the old models as well.
Since you're coming from the P&S camp, Point No.3 doesn't really matter for you, as I am sure you are used to using a LCD to frame your shots. The LA-EA2 enables compatibility with Sony Alpha A-Mount DSLR lenses, also a moot point. There are minor differences in the UI, but not too much to mention. So it just comes down to whether you want Full HD video, or the body shape, which will require demo unit testing.
Getting a comfortable body is a very important part to using a camera IMO. Some people like the flat, slightly longer feel of the C3, while some can't live without the hand-grip and magnesium body. Really, go to a Sony Style or Sony Centre and test out both bodies.
The differences between model / package types are the lenses, or "Kits", included in the package.
NEX-C3D / NEX-5ND : Comes with SEL16F28 and SEL1855 lenses
NEX-C3K / NEX-5NK : Comes with SEL1855 lens
The SEL16F28 is a wide-angle 16mm, panacake lens, while the SEL1855 is a multipurpose zoom lens, covering 18mm ~ 55mm. Both lenses have their own uses. If you want a smaller package, go for the SEL16F28. If you want more flexibility, SEL1855 then. But really, I recommended you to get the D package and grab both lenses.
In my opinion, the price difference of the C3 and 5N is small (300~350), and I can't seem to justify why anyone would get the C3 instead of the 5N. The 5N is just so much better.
