bro, I realised that you didnt include the koay teow thing of "7th street market" (direct translation from hokkien, somehow can't remember the real street name). That's my favourite koay teow thing. Dhoby Ghaut's koay teow thing also aint that bad but somehow still lose to the one at 7th street market. Try it out! Not hard to find the stall cos it's probably the biggest and busiest stall at the market. All their staff will be wearing yellow uniform if im not mistaken.

QUOTE(Hantu641 @ Oct 14 2011, 07:41 PM) Greetings, I think in Malay terms, " Char Koay Teow " is a bit watery with gravy but when they say " Koay Teow Kerang ' then it is CKT. Soya sauce is an important ingredient and to some extent to Southeners "Dark Soya Sauce" is also important. In fact these two ingredients ranks highest in importance even when compared to lard that the Chinese swears by. Thing is both the "Kicap" is a chinese origin ingredient and therefore the highest quality is therefore made by chinese factories. In fact the best I tasted is still cottage industry where they market themselves and not available in any supermarkets or mini markets. The ones produce 'halal' is inferior so you can't expect much when compared to Penang or Johor CKT for that matter.Want to ask: where to get best halal chinese style penang char koey teow in kl??? i getting hard time to locate any shop or pasar malam with the best old school type of char koew teow that i used to eat 3-4 plate each time i go for dinner at parit buntar 5 years ago.. that when i starting my 1st job there for while the cook is a chinese but cooking with small stall only.. malay char koew teow now all wet type, too many soup like almost mee bandung already.. seem hard to get that nostalgic taste.. There are exceptions though but I have only tasted it in Penang but not in KL. In Penang, the one in Bridge St. is still frying using the old way where the 'koay teow' is fried till fragrant in oil just like in Cantonese Fried before anything else is added. This itself makes the koay teow has a slightly fragrant burnt tasting. Everything is evolving now but actually changing to easier and faster way of cooking. |

for me, char koey teow is ike u said koay teow kerang if cooked by local chinese stall or shop. if malay stall, i only said "koay teow goreng" only..
no matter if got kerang or not.. i already go to various pasar malam around kl, malay or chinese stall to locate the taste that suit for me to be called ok good. For the soy sauce, some CKT cook mixing up 2-4 soy sauce to cook CKT. they said it for the best CKT, but the taste only so-so ok lar. i have seen twice at butterworth and kulim kedah..the CKT almost good that the one i have taste parit buntar, but till cant fight.. nowdays living at kl hard to get outstation just to find a great CKT.. for a malay like me, i have to see the cook cooking CKT for while before i feel satisfied that CKT is halal even the cook is a chinese. if got some suspicious, then dun buy la.. that y im getting hard time to locate halal one at kl.. |
