Yes..backup everything and restore them back after you're done with the jailbreak.

Q4: is an app that allows the itouch to view diff kinds of video formats (avi,mkv..) in cydia? vlc4iphone, dTunes, mplayer. Q5: is there an app that allows itouch to view flash based websites in cydia? There's no flash support for iPhone yet but there will be soon.
