Yeah, the MAC OSX lite version on both the iPhone and iPod Touch are theoretically capable of adding 3rd party applications. But Steve Jobs locked the file system with the latest firmware update 1.1.1. All hope is not lost as some mac-related articles have spotted a provision of signed applications in the latest firmware too. So its a matter of time when this feature will finally be available. No promises though.
At the mean time, the only operable applications are run through Safari in the form of AJAX web applications. But I read some hacker was able to take over control of the file system by manipulating the browser TIFF exploit. This is only a short term solution since Apple can patch this in the next update. Another more longer term solution is to simply hack the file system which is already in the works.

8GB user here. So far so good. One feature tat I hope apple wud include in the coming firmware is to have touch to be detected as harddrive.
I read somewhere that once the file system is hacked and taken control, you'll be able to enjoy this feature in the form of another ipod management software. This will eliminate the need to use iTunes every time you want to sync or add files from different computers.
