Im user of PD+W10. Currently the only supported version are Preview version where you can download for FREE. So far i have 2 essentials apps under W10, and both run smoothly, havent experience any crash or lagness. MBA do start to feel warmer, but still feel much cooler than Intel MBA. I canāt promise the apps your wife gonna use will have the same experience as me, since its a Preview version from both PD and W10, so bugs or instability are expected.
I highly recommend go for 16GB Ram if you wish to keep the device for years to come. Apps are getting more and more memory hungry everyday. To top this, current M1 Macs utilizing Swap Memory where it used your SSD as RAM, shall your RAM have no sufficient freed memory. You can google the pros and cons on this, but best decision is to maxed out RAM, if financially allowed.
Storage size is very subjective, depend on users. It made no difference on performance for lower or higher storage size. Get any options you find suitable.
