There's 2 practice.

In school and practical we always have knife and small spoon in our chef pocket, so that we always able to taste the food we serve

But in Malaysia and real world culture , want it fast, and no one will reach for spoon, so they just use hand instead of spoon.

Seriously, u can't mix commercial prep food with Home cook la..

I seen so much I gave up, many go against what we have thought

Err most kitchen is like that, tasting food etc, and wearing mask, well when you in a very hot environment, then you will see how much of hindrance is the mask.

Thats why, i nowaday avoid restaurant and cook myself at home (ok the wife does the cooking) 😁

For the price they are charging, they should use a spoon. It’s it’s a mamak or kopitiam different story but if you gonna charge 30 bucks for a breakfast then you gotta at least maintain some quality.

I told my wife dont ever ask me to go to any of these foodhunters/local food blogs recommended place after so many disappointments.

but I suspect many of these restaurants are funded by fama/money laundering thus they dont care much about the food taste and all

like this one cafe near teck ming sunway. went there last week to change tyre, since got many customers I decided to walk a bit for drink. surprisingly the delhi boys are manning the restaurant now and I dont see any local staff there.

the spaghetti I had is like _____________ and the latte is , well, ok but price wise not reflected the quality

but I realized the cafe's customers mainly are those sunway uni kids so...

again, not worth for second visit.

We use tasting spoons, taste once then discard for wash. Use new one to taste again. If sometimes need a quick re taste, maybe use the spoon handle end.

First time I heard of ppl using finger to dip and taste. Then re dip again same finger to taste.

Not everything also use finger to poke la.

Malaysia no longer commands a good cafe or food culture. I have generally stopped following food reviews or food blogs as most have become gibberish junk. It is as bad as the car review scene in this country, most if not all are scripted by the person paying the bill.

Any cafes near a private college will never be good. Much of them rely on bank of FAMA to roll or provide the initial capital and their customer base also tends to be FAMA money. 90% of these types of patrons do not complaint if the quality is not reflective of the price or service levels are abysmal at best and this in turn basically allows these types of restaurateurs a carte blanche to serve rubbish food at over inflated prices.

Money laundering is definitely big in this industry, at one point I was told by a DSP that at least 70% of all eateries are very cleverly hidden money laundering operations.

Hainan bread shop oven plate just use brush to swipe and clean, never use water. Next day reuse for next batch, rinse and repeat until got dark left over. (At night dunno how many cockroach visited)

Nobody can deny that but that doesn't mean people/customer has to accept.

Open kitchen concept is to bring transparency to both diners and chefs / cooks - its a trust and confidence factor.

Any chefs / cook MUST always withhold integrity when it comes to preparing a dish, be it local, western or some high atas dishes. A good chef always pride themselves with integrity to ensure the food is cooked well, safe from CONTAMINATION and taste & presented well.

For those who claim that this is the ‘real world’ - this is true, you can’t change people with no integrity to suddenly develop integrity. Do your part as a consumer, avoid these places like a plague. Unless, you don’t mind paying for contaminated food.

Imo, tasting the food cooked is essential to maintain quality. Those saying they don't need to obviously never worked fnb especially during rush hour where sometimes the quality can vary from order to order because they just want to just out the order first. If they want to maintain super high quality during peak hours, then expect to wait for longer time for your food to be done. But then expect to receive complaints their food very slow to arrive. But I do agree tasting with their fi gers is wrong and disgusting. Summore double dipping. He could have touched a lot of oils and wasted food and didn't wash his hands properly. Should have used spoon for example.

the spaghetti I had is like _____________ and the latte is , well, ok but price wise not reflected the quality

but I realized the cafe's customers mainly are those sunway uni kids so...

again, not worth for second visit.
