After all those years, it’s finally been found.

The late Colonel Sanders’ secret recipe for Kentucky Friend Chicken recently found its way into the hands of Chicago Tribune journalist Jay Jones… practically by mistake.

For years, KFC has made sure to keep the secret. The company has even gone to the great lengths of having two different suppliers prepare the herbs and spices so neither supplier could know the exact recipe, a spokesman told the Tribune.

But during a trip to Kentucky, Jones met up with 67-year-old Joe Ledington, a nephew of Colonel Sanders through marriage. While meeting with Jones, Ledington pointed out an album that had a certain picture in it. On the back of that picture, there was a list.

u can know the content but never the dosage... so never get it right... plus the chicken freshness and oil used also made a difference...

Main reason why KFC workers don't know whats the SR is that the chicken comes pre-marinated and the only work that KFC staffs do is dust the chicken. Depending on the premise, KFC chicken is either dusted in-house or out-house. Which begs to rebut all of those KFR (Rat).

Dusting is the act of mixing the spices + flour.

Also, why hasnt any Halal authority checked whether those spices are halal or not since it can get contaminated during processing ala golden churned butter scandal.

You can't do it. Why?
1. Oil viscosity, temperature and type.
2. Loss of moisture after cooking.
3. Amount of spices needed.
4. You can find the general spices but region specific spices are harder to pinpoint.
5. If it was attainable competitors would have done the same. Kinda like why MCD has better burgers but shitty chickens.

KFC recipe is different in different country.

U go try eat at Indonesia, salt is free in that country... last time I order 3 piece chicken... finish 1 piece + 2 bottles of mineral water.. full liao...

i think cannot detect one la, if cn then the recipe would hav been revealed long long time ago dy, i seen a documentary before it says KFC hav alot of suppliers for the 11 spices n each supplier duno each other, n those suppliers cannot reveal that they supply spices to KFC, n when they supply to kfc its not done using their company's vehicle (means no company logo at the vehicle, just a plain truck or van), everything is done very secretively

Well, it actually depends on the duster or the spice packager. Even in Malaysia some of those KFC I ate are saltier than usual.

u go tast the USA 1st KFC and local KFC... sure got difference 1.. recipe tell wat.. u just dung the raw chicken into the herb mixed the franchise owner give la... franchise owner are told on the process, frying time, temperature... that is it...

Staff working there already knows the SOP such as temperature needed, marinate time and cooking time.

Insiders help is needed to get individual samples of your listed items 1-5 in it's raw form. It really it not that difficult. Amount of spices and type of spices can be detected accurately by lab equipment.

Not send the finished product KFC to test, like that of course difficult la.

KFC ALMOST

The above link is one of the company sued by KFC that barred them from selling to any KFC outlet. Why? Its almost indistinguishable.

I think a colonel tasked them to reproduce the secrets spice and they did.

let me know if you can find a lab that can clearly identifies the percentage of each ingredients in a finished products based on its chemical composition

At most, labs can identify the compounds/chemical composition in a finished product that comes from a mix of ingredients. They can then guest-estimate roughly the percentage of what being used, but to a very limited accurary, very unlikely to able to replicate/identify the exact ingredients being used.

Possible with the raw batter powder, i think with effort we can identify & replicate up to 99% accuracy. Still, without a control (the actual composition of the correct formula/recipe), you wouldn't really know if you've a 99% accuracy. Maybe a taste test.

I believe there's some products in the market that sort of replicate the KFC test very closely already.

Still, to get even closer, I believe is achievable with more repetitions and analysis via more accurate and proper chromatography and spectroscopy technique, maybe we can really guest-estimate the exact ingredients. But who is willing to spend that amount of money to do so when you can just visit KFC everywhere and get that product for RM10? LOL

Even if you've done it, what would it do with it? Market it? Do you have the money/funding to start a new KFC? maybe KFC will sue you later for stealing their recipe

Nope, just studied Chemistry for my uni degree, ex-chemist but not a chemist anymore. I believe with sufficient repetitions, we can definitely fully identify its compositions.

But wherever it comes to food ingredients, the forms/texture are equally important.
Example, Black pepper powder and black pepper course gives a different tasting experiences. Those has to be accounted for as well.

Thing is, taste is a very vague subject. If might taste the same to person A but maybe not person B. So I even if you've get a 100% replication.

When u tell a person to do a taste test with sample A is 100% replicate and sample B is KFC and assume both are cooked to the same condition from the same chicken. My guess is that the test subject mostly will still say sample B is more KFC whereas sample A is not so KFC-like.
