why ? because the water reduces the friction force and heat btw ur finger skin and the table.
anti friction agent is only 1 small part of the whole additive package. there's alot more in there.

the BLM in my house behaves the same.
if want it to downshift, step abit more pedal then it will vroom past 3.5k easily and all the way to 4-5k
once i ease of the pedal abit, it will shift up again
