The the high and lower range is much more than bookshelf. Of course for movies is always advisable for floor stander

Definitely having a sub is important but that might not compensate everything a floorstander can cover. It also comes down to the speaker itself on how high / low it can go.
This is to ensure no missing freq. The source of the audio is also very important. As personally I had experience before because of a good source and is really very consistent.
Last year, I happen to have a pair of Q-acoustic bookshelf in my house which belong to a friend. I had used it for HT for testing. All movies tested are BD. Player is  Oppo 103D
with Yamaha A3050 AVR. Now few movies tested for TrueHD, DTS-MA and atmos. No DTS X that time to test. For TrueHD and DTS-MA with bookshelf is just so-so. I had a SVS
sub on all movies during the test. With my floorstander (B&W CM8) the sound is much fuller. Now, finally tested movie with atmos. I will expect it to be the same result but to
my surprise the bookshelf perform as good as my floorstander this time around. If I will to do a blind test, I cannot tell the difference at all. So is best for you to try out yourself
to make the conclusion.

You can determine it by yourself on auditioning side by side between the bookshelf and floorstander of the same series. Personally, I would go with floorstanders if space is not an issue but it is most important that you choose a speaker that you feel sounds accurate and pleasing to you in your listening environment.

Totally understand on the budget, so is best to invest in sub because HT cannot be without sub 

Dali Zensor 5 should be good enough. Try to spend more on the sub but if budget is not a constrain then DZ 7 would be better of course. All LCR must be timbre matched. You can also consider Dynaudio speakers if budget allow.

The setting depends on your sub as well. For myself I set it at 120hz

It's on AVR. The reason for this my SVS ultra can handle it. Having cross over overlapping certain range of freq is always better to ensure there is no loss of freq.

That is the idea. A good sub will do all the low freq. speakers are for high and mid

It should be. That is what sub should do. Each speaker and sub has its own duty. Doing it right will give you good sound. Doing it wrong and is noise that all you get

For crossover setting, I tried between 80hz and 120hz, currently I set it at 80hz. Low frequencies are redirected to your subwoofer instead of your other speakers. Usually 80 Hz is a commonly recommended crossover setting by THX because this is the generally accepted point at which it becomes difficult for humans to localize a sound.

Setting the cross over must be determine by your speakers and sub capability. Recommendation is a guide line. Wrong setting meaning there some freq that will be missing or too much overlap

Previously, I was quite interested in DZ 7 with its clear, engaging sound and elegantly built but pretty sure it will be out of my budget. Therefore, never get to check on its price here.

Usually both ranges will be showcase and maybe some older models with higher discount and whereas newer models usually with very little discount especially for flagship models but it would also depends on what brands or items you are looking for.
