On CM7.1 with stock kernel
Glitch nor fugu didn't seem to work well. Random reboots.

Anyway with stock kernel OC/UV is enabled
SetCPU with 2 profiles
One with screen off another while charging
See how battery life is with this.

Make sure you back up your /efs folder and store that folder in your computer.
That's ur IMEI info.

I suggest not updating via kies.
Rather download the ROM and update via ODIN, much faster.

Personally the stock roms have issues in terms of lag.

Once I went via CM7, it was a much more enjoyable experience.

It really depends on what you're downloading.
You can download stock 2.3 roms and flash via ODIN, those roms are typically 200+mb.

Flashing itself takes a few minutes at most.

CM7 is ~100mb if i remember correctly.

But CM7 is slightly different from flashing stock roms.

The key is to get a CWM recovery on, then flashing custom roms are much easier.

For browser, I can't comment, because the CM7 browser is good enough.

You need to fix permissions to fix the FC, u can do this with CWM.
As for battery drain, sometimes it happens with different roms.

No, not normal, around 38-42 is considered normal.

Shut down your phone and let it cool before rebooting.

Speedmod kernel will give root access.
If SU app doesn't appear, you can download it from market.

MIUI u need to use CM7 based kernel
Go for NEO, I am testing it now and it seems better than glitch (which really glitched the phone) and fugu which wasn't that good I think.

But fugu and NEO (platypus) provides lower min brightness which I prefer.

Also, you need to flash a CMW compatible recovery before attempting a CM7/MIUI flash.

Well, my brother is using MIUI on SGS, he said the latest rom not very stable due to FCing, But i think its due to permissions.

No word from him on battery life.

I myself am on CM7. Battery life is decent, thinking of switching to MIUI to see.

If you're going to run some other firmware other than stock.
If they are running on ext4 or yaffs2 there is no need for lagfix.

As for voodoo sound, u need a kernel that has voodoo enabled.

To root, you need to use ODIN and flash something like CF root with CWM recovery

Once you have CF root with CMW recovery, u can then flash other firmwares using recovery.

Just use the JV1 version. Doesn't really matter that much.

No need for lagfix for either of these as filesystem is yaffs2

I am on CM7.1 + NEO kernel

head over to xda for instructions.
its best to have a CWM recovery installed first via speedmod or other kernels
then follow instructions carefully.

Read and read and read again before doing anything.

20mb of system ram will not lag the system.

If you like ASOP android, I suggest flashing to CM7 over any stock rom variants.

After testing out stock roms for a long time, I find CM7 is smoother in terms of UI and faster in terms of app loading.
