There will be 2 backup, the pre-JB/restore backup and the post-restore/jb backup. If you go to iTunes preferences under devices tab, you will see a list of backup. You want to restore the one pre-restore/jb so that you get back all your contacts/SMS/ etc.Added on February 20, 2012, 11:05 pm

I personally would do it this way1. Backup my iPhone on 5.0
2. Download the 5.0.1 firmware file manually
3. Do a shift+Restore which will wipe my iPhone clean.
4. Set the iPhone as a new phone
5. Jailbreak using redsn0w
6. Restore the old backup.
