Most of the description is cut short by the Anime. For example Kirito's inner monolouge during his last duel where he figures out the sword is weak due to the decorations, hence why he can broke it into two. Also the fight in the dungeon with Asuna where they explain the switching system was fare more detailed in the novel. Anime one is... blegh

Its pretty frustrating, I was genuinely waiting for an explanation on how Kirito manage to break that dude sword only to be disappointed. :/

They just take turns

basically, as this is a death game, u wanna keep your HP always at green
to do that, they usually go spamming their sword skill, but some skill have long cooldown and some movement delay after launching it and when the sword skill clash with enemy's sword skill, a knockback occurs and u and the enemy will both be stunned for a few sec(this is not good if u're alone fighting a group of mobs)

so they created the switch system where one or more person take the front while the others defend at the back, when all the skill is in cooldown or both u and the enemy is stunned, they switched position and launched their sword skill as the enemy is still stunned

this technique is very important for the people of the frontlines especially during the boss fight, as the switch skill also allows u to use potion after switching(note that their potion is regen type)

Why can't they just attack together or stand aside if get attacked? or izzit after switching out, the monsters won't be able to attack you?

thats because u'll still get some HP reduced even if u defended against a sword skill, the switch technique is like a way to spam your sword skill with unlimited cooldown until the mob is down

episode 9 the bestest episode out of all...combo dual blade and asuna all over kirito damnnn....
