Yes, I'll hazard a guess that 4 x 8GB would be cheaper than 2 x 16GB but the slightly higher premium for the 16GB is worth it in my opinion. A sweat spot if you may call it.
Of course the story cycle never ends. When D800 comes out at whatever resolution, the same thing would happen again with 16GB cards. Not enough. Swapping cards was not too bad actually. Especially if you shoot JPG or compressed NEF on older cameras. After a while, you'll learn how to juggle.
If one shoot video, that's another story too
I still carry my old card as well, the 4GB from compact cam. Just extra cards and it doesn't takes up much space or weight anyway

For swapping, there's another theory from people about trying not to insert/remove the card too often, again, another story.

I couldn't imagine what would happen to me if I'm having 2x 32GB at the moment. I usually review my shots when I got the time to make sure the lighting are good and images tact sharp. Otherwise I'll make changes to my setting. I do use battery grip and my battery only in the grip slot and the body is empty. In addition with using flash and sometime commander mode on body, hence why I left 30%++ after 800++ exposures.

I have same issue as well, my HDD full, 2 of my external HDD also full, recently I just got 1TB hdd. If size is not a matter, get the 3.5" size, which is much cheaper and you may get faster speed as well.
For your battery usage, I think that's good enough or around the same; I forgotten that my differences with yours; its because I shoot RAW+JPEG, thus the exposures count it less when filling 16GB space.
