dear, from what i understand, PvZ is in favor of P unless he is a btr player than you to even start off. if you 4 gate, a 14 hatch 14 pool zerg need to execute perfectly to stop it. need 2 spines once expo is done and cannot drone too hard, over 21 drones are too dangerous in early game. i dno if your opponent hatch 1st frequently or not but i rarely encounter zergs who go 21 food hatch and above. 3 gate expand relies heavily on your sentry usage. practice your sentry usage more against AI and the 5th challenge in single player. it is highly defensive and its only counter right now should be burrow roach timing which is super rare.

http://wiki.teamliquid.net/starcraft2/3-Gate_Sentry_Expanda good way to learn is to check what liquid HuK has on the 4 minute mark, 5.30 minute mark, 7.30 minute mark then compare it to your own blind build order against an easy AI. if you can get even, you are good to go for some laddering.
for late game, collosus rapes zerg.
