Northern Chinese as a lot of black vinegar in their cooking. And they dip their food in vinegar as well like we do our food in soda sauce. You can all them to adjust the spiciness level.
Their fridge is full of Tsingtao beers in can. Goes very well with the spicy food. Bon apetito!
