But me, as an Astro fan, I can advice you on the packages stuff la.

First of all, what's your monthly budget?
You said Chinese package, it depends which Chinese channels you want to watch.
Children channels, as in Nick, Disney, Cartoon Network all those? If yes, then it's under Mini package called Kids.
For Starter and Value Pack category, each of any Mini pack costs RM12/month as what you can see on the picture above.

Remember to give them 30 days advance notice that you want to terminate the service. It's not that you want to terminate now, it can be done now.

Hope you could share more detail on what are your "must have" channels, and/or which are the channels is your main priority and not-so-priority, so that it'll be easier for me to recommend.

Cheapest way to enjoy HD service, start with "Starter pack" category, from RM61.32/month (RM65/month incl SST). 
Astro Xiao Tai Yang and Astro AEC is a free channel, so don't worry.

Celestial HD is "free" if you choose Chinese Family pack, same price RM65/month also.
On Chinese Family pack, besides includes Celestial Movies and a few other Chinese channels, it excludes a few Malay and Tamil SD channels, that's all the difference.

Do you have any other "must have" channels?

If you take both Sports and Dynasty pack (which includes Astro AOD, Wah Lai Toi, etc.), your monthly fee will straight away cost more than RM100/month. 
Do you need all of the main sports channels, like all Astro SuperSport 1, 2, 3, 4 channels? Do note that Astro Arena and eGG Network are free channel (included in Family pack).

You said, you watch Fox Sports channels are mainly for motor racing like F1...
Do note that Fox Sports 3 channel is free (included in any Family pack). This channel mainly shows selected F1 matches, cricket, motorsports, etc.
If you wish to have a complete Fox Sports 1, Fox Sports 2, and others sports channels, you'll need to take Sports pack where that pack alone need additional RM30-50/month (price varies on your subscription), so it'll exceed your RM93 budget very easily.

Let me know if you don't mind taking that Sports pack, so I'll help you count it again.

So apparently, your "must have' channels seems to exceeds your RM93 budget a little bit already.
At least for that RM105 price, you still have Astro AOD, Sports Lite pack (not the complete Sports pack since it includes only Astro SuperSport 1 and 2 only), Fox Sports 3, and others.

Satellite dish is just an equipment to send/receive signal. That's all.
There's no such thing as "pairing" like how you would pair a Bluetooth device for a satellite dish.

1) Check your satellite cable (RG6 cable), make sure it's properly terminated and it's not easily pull out.

2) How many cables being connected to your PVR box? 1 cable or 2 cable? If it's only 1 cable, make sure you've connected to your PVR box's SAT 1 port, not SAT 2 port.

Go to home>Settings>Installation Settings>(Default PIN 0000)>Satellite Settings
Make sure your Input Source is set correctly.
If your satellite dish uses dual LNB, make sure you selected as "LNB" as input source.
If your dish uses SatCR, make sure you selected "SatCR".

3) Based on your screenshots (thankfully), I notice your 10732MHz is Locked (means has signal), but other frequency are NotLocked (means no signal detected).

You might want to check the LNB skew of your LNB on the satellite dish. Loose the screws on the LNB holder, then turn the whole LNB until you get high signal readings.

If still same, then your satellite dish needs to be realigned.

Try uninstall then reinstall Astro Go app.

Yes, but the picture quality difference the two, is considered almost indistinguishable to most of the viewers.
But if you ask me, yes, I do notice the picture quality difference, especially if I stand very close to my TV screen to observe the picture quality (almost as if like I wanna buy new TV at the electrical store).

For those who can't tolerate even the slightest video quality difference between Satellite and Plug & Play platform, then no need to dilemma further, just proceed with Satellite and forget about Plug & Play.

If you can go for Satellite, then go for Satellite.

Astro don't use 60fps. They use 50fps according to the PAL 50Hz standard.

You'll still be able to watch smooth 50fps on linear TV channels over Plug & Play platform, but still, the picture quality is still not exactly 100% same as Satellite.

With satellite at least you have options A or B. If only Internet, then if Internet down or your networking device kaput, then sing song only 

Ultra / Ulti Box can only record through internet. They might be referring to your legacy PVR box.

Yes, it'll use back your existing satellite dish, but the installer will replace a new DCSS LNB for you. It is to allow you to watch Astro UHD channel on your Ultra Box.
LNB is the small little reflector device on your Astro dish. Yes, only that thing will be replaced if you upgrade to Ultra Box.
But for some cases, where those who already been using DCSS LNB prior to this, then they'll just use back the same DCSS LNB as it is.

I bet that agent must be not well versed enough with all the features and services being offered by the company that they work in. 
Whenever the Ulti/Ultra Box having no satellite signals (due to rain), this message will appear, prompting you to switch to Internet to continue watching the particular TV channel you've been watching to.
This feature is called Continuous Viewing (that's what they called it).

Once you press Switch Now, and then from this point forward, you'll be watching the channel via Internet connection, and the picture quality will be the same as what Ulti/Ultra Box (Plug & Play) customers get.
When you tune to other TV channels, it will switch back to Satellite mode as per usual.
Because the PVR box is a dual-tuner satellite receiver, which is meant to receive/record 2 channels at a time, and the recording job is done right on your PVR box itself.
For Ulti/Ultra Box however, the recording feature are solely rely on cloud, where the channel is being recorded and stored into Astro's own servers.
Whenever you press Record on your Ulti/Ultra Box or Astro Go, it is just sending instructions to the Astro servers to carry out the recording job for you. That is why you can record unlimited number of channels at a time.

The old Super Pack 3 price after tax should be RM172.80/month. Did you add something else on top of your old Super Pack 3 that makes it RM179?

Ohhh.. It seems that you're already using DCSS LNB.
Since you mention Disney+ Hotstar is your must-have, then I assume Movies Pack channels (HBO, Showcase Movies, tvN Movies) are not your must-have channels.... Here's what you may consider:

Sports Pack (RM89.99) + Chinese Favourites (RM14.99) + Disney+ Hotstar (RM18.30/month*) = RM123.28 + 6% SST
= Equivalent to RM130.67/month

*Disney+ Hotstar a la carte add-on will be charged one-off RM54.90 for every 3 months. After divide by 3, hence it's equivalent to RM18.30 per month.

Therefore in the real world situation, it shall be like this:
Month 1: RM89.99 + RM14.99 + RM54.90 = RM159.88
Month 2: RM89.99 + RM14.99 = RM104.98
Month 3: RM89.99 + RM14.99 = RM104.98

It is the same price anyway. It's just that if you subscribe through Astro, the RM54.90 will be charged in your Astro bill, make you feel seamless like "you got everything in one bill" instead of charging separately/directly to your debit/credit card.

Movies Pack itself already bundle with Disney+ Hotstar subscription, so you don't need to add on separately.

Seems like the issue is due to the F connector of your satellite cable. Do it at your own risk, try re-terminate your satellite cable, like this video below:
Lazy to do? Don't know how to do? Need Astro to assign technician over to do for you? Contact Astro customer service, and choose one of the options below:
1) Pay RM65 service fee per installer visit.
2) 12 month contract extension on your Astro account.
3) Scold that Astro CS agent that Astro is good at sucking your money.

If you don't feel like contacting Astro customer service for various of reasons (e.g. no agent answer my call), then you can go Facebook and search keywords like "Astro service installer" followed by your city name.
Example: "Astro service installer cheras"

From there, simply look any one of the Facebook page that advertises Astro installer, contact them and they'll assist you accordingly.
This way, no need to go through Astro customer service. Just deal directly with the Astro installers out there.
This is considered as private hire contractor job, so don't expect people help you for free.
