Growl is amazing, many applications uses it (in my case, Adium, Dropbox, and one more i can't remember)

^ parallel desktop got better 3d support. if you're planning to play games on it, parallel is better

vmware fusion feels more stable to me smile.gif emphasis on 'feels'

It will definitely slow down your computer as you are basically using 2 types of OS. But not to the extent of total non usable. How much RAM do you have? 4GB should be enough to run Parralel or VMWare.
