Yup thats usually how it turns out on most servers.
When they are good they are very, very good. But otherwise...
In other games Warriors/Fighters are usually the default beginner class since they are the simplest to play, e.g. Just hit things until they stop moving. Not so in WOW, thanks to Blizzard's unique implementation of this staple fantasy RPG class with the idea of "stances" and "rage". A good WOW warrior needs to learn stance dancing and rage management to be effective. The good ones are really good, the bad ones levelled up to 60 using only the default stance.
I've played a DPS warrior for awhile, both dual wield and 2hand MS builds - come to think of it, I dont think I've ever put more than 5 points in Protection in any build in my entire warrior career

In TBC instances, I find I can outdamage warlocks and hunters, but not mages and rogues and have to pay careful attention to beat out druids in bear/catform.
But back to the maces and daggers question...
Maces Dual maces for Fury warriors I think are fine for PVP where stuns are gold, assuming you can find powerful ones (fewer compared to 1h axes and swords) so that DPS does not suffer - high burst damage is a must if you hope to kill anything.
For PVE DPS, especially on bosses, generally there are better choices in swords and axes since the sword and axe speciality procs works on everything, unlike the mace proc (Just about all bosses are *immune* to stuns).
Daggers Daggers are probably not a good warrior weapon choice - yeah, rogues use them all the time but then they have plenty of talents that improve their damage output with daggers that a warrior has no access to. One of warriors in my guild used to tank with the lobotomizer from AV but he was the rare (and slightly crazy) one.
Would be interesting to try a Fist Weapon fury warrior though - there are some slow, powerful Fist Weapons with high top-end damage in TBC e.g.
The Bladefist from Heroic Shattered Halls.

I'm starting to notice one thing about warriors in general.
When they're good, they're extremely good.
When they're not, don't expect them to be open to suggestions, or should we say, constructively critism.
