You probably can try out skyscanner apps. Just set an alarm on the date u choose and they will notofy u once the cheapest tickets available. That's how I got my sia tickets after ~2mths of waiting and seeing the price of diif airlines fluctuating weekly from RM1k till got this cheap tickets  in aug 17.

Also dependent on spending habit and what you'll see. I suggest you count how much is the entrance fees to places you want to visit and put the money aside.
For example if it's Madame Tussauds + Tram Ride to Victoria Peak, it could cost you $HKD200+ per pax.

Your spending money per day should be only transport + meals. Then you can estimate how much you can spend in a day.

You're right, it's somewhere along the line for prices. A breakfast in local coffee shop will probably cost around $HKD30-60 depending on what you order. Lunch is estimated $40-$80 for an average meal with drinks and dinner probably around the same. You should estimate abit more when you try more expensive food such as dimsum, roast duck/chicken etc.

Sure you can spend along the lines of what you planned earlier. However I suggest to bring abit more anyway so that you don't have to restrain yourself too much. Holiday is about enjoying food and shopping.

Yup. The visa is only for shenzhen. Cant go to anywhr in china except for shenzhen.

I think you better stick to HK & Macau. You can travel to GuangZhou and spend 5 days there on your next trip, no need to rush everything.

From HK to Shenzhen can get Shenzhen Visa on Arrival at Louhu Border can cost 170 RMB.
You only restricted in Shenzhen with 5 day duration.
If you plan going Guangzhou you need Full China Visa which you need apply at China Visa Center at Malaysia.
