The MAIN reason why I'm highly likely moving to Fuji is because of the amazing colour reproduction. Yes, what you heard on the internet is true.
The colour reproduction is pretty damn good and like they say, the colours POP! This is true for both RAW and JPEG files.
I could try to replicate Fuji colours on my Sony by post processing but it would take too much time. Shooting with the Fuji enables me to spend less time on the post processing stage (although I still do spend a lot of time on selected few shots which I think can be added to my portfolio). For trip to Singapore, shooting with the Fuji X70, I did not even have to edit the RAW files as it was already damn good.

I'm not looking into getting something expensive to "step into" the Fuji ecosystem. Looking for something affordable that works but I might always upgrade to a better body later on (I'm hoping the XT4 comes with IBIS). I am primarily a travel and landscape photographer but I do also take portraits of my SO.

I am looking at the Fujifilm XT20
(used unit) which goes for RM2,400 and a Fuji 10-24 f/4
(used unit) which goes for RM3,000. Might add the Fuji 16 f/1.4 later on.
I know about the XT2 which cost around RM3,300
(used unit) but the advantages over the XT20 like weather sealing, faster/better AF (?) and other features doesn't really benefit my style of photography so far and not to mention the XT-2 is 32% heavier as well. And oh, the X-T30 could be announced anytime early next year..

I'm also a former Sony a6000 user, I switched to Fuji XT20 after September (I was hoping sony would release a6700/a7000 with a better color science). I've switched pretty much on the same reason as you, I just couldn't stand the Sony color science anymore. I was also looking into a used XT20, but after much consideration, I went with a brand new one. Reasons:
1. The cheapest option I can find on kldslr at that point was also around RM2400. IF you think about it, RM2400 is not that cheap compared to a brand new one. A brand new one cost RM3099 (latest price on shopee as of 2nd Jan 2019), which is about RM700 different only.
2. Brand new one comes with a kit lens 16-50, which you can sell for RM400-500. That can off set the price different of the brand new one against the used one.
3. Brand new one comes with one extra battery which cost around RM200. Again, can off set price different. I don't know about you, but for mirrorless camera, extra batteries is a must. I got 4 of them by the way.
4. 1 year warranty and memory card. If you buy used one from kldslr, those bodies they sell, do not even come with a battery, which was quite disappointing.
Coming back to topic of XT2/3 series camera, other than those features you've mentioned above, I've find that with their bigger body, they are better match with bigger lenses compared to the tiny body of XT20. So, yeah, buy what suit you the most. And I would suggest you buy those existing camera, be it XT2 or XT20, and don't wait for the XT30. New releases always comes with a premium and sometime, bugs. Why pay more and be the guinea pig at the same time?
