China ROM have a faster development cycle(more updates and updates are pushed faster), and there's no GAPPS(Google Apps) because Google is blocked at China so if you need it you need to flash it.

The language difference is just for the initial setup actually, after you've flashed the rom you can change the language back to English.

Your website is great. The search function return items from many online stores. But the search function could use a little bit refinement, for example when i type tp-link d9, it return all types of tp-link routers and networking products, not just that particular model that i search. Anyway, tq for the hardwork.
