I've played around 6 games of the DEMO including the opening Liverpool vs City game, which was nice touch to showcase the ambiance of a title decider type match. I'm not a Liverpool fan so it did nothing for me personally. After one game, I just skipped it everytime I started the game.
I'll just break it down in Pros and Cons.
PROS:
1. Animations are improved and transitions look a lot cleaner compared to the snappy movements on Impact Engine.
2. Ball physics is tweaked, the ball feels a bit heavier and a bit more consistent in terms of its weight in different situations like crossing and shooting.
3. Cutscenes and replays are improved, EA has done great with the presentation side of the game. Some added commentary as well but this part is down to preference.
4. EA has made good use of licenses with EPL TV popups and real referees added, I noticed Chris Foy in the Liv vs City game.
5. Game transitions a lot better now in between cutscene in terms of the out of play aspect. For example, when the ball goes out, there's a ball-boy/steward that throws it back in for goal kicks and throw ins instead of the player chasing it all the time.
6. The physicality of the game is much better, shielding is a lot more useful now and you can intentionally foul players easily when you want to.
7. Loving the realtime corner tactics.
8. Player inertia and footplanting is more prominent, some players slipped a few times when turning. Might be able to emulate Stevie G's slip.

CONs
1. It's still a relatively poor PC port of the next-gen game. Not much options apart from Low-Medium-High. It would've been nice to have the ability to tweak stuff like LOD and texture quality. Even Anisotropic filtering would've nice although it could be forced by GPU.
2. If you limit the game to 60 Fps, the cutscenes are capped at 30 frames so it would make the game's transition between gameplay and cutscenes a bit jerky. Make sure you use no Limit on FPS and enable V-sync or Adaptive V-Sync(NVIDIA) in your GPU control panel.
3. Goalkeepers are super human and when they do save it's always parried to the front, if this doesn't get fixed, we'll see a lot of "bola muntah" type goals.
4. Shooting is a bit weak and lacks proper trajectory and speed.
5. Referee is still annoying and doesn't get out of the way.

6. Player height is all over the place. EA can't get the simple things like player height right. EA should stop using Wikipedia as reference.
7. This might be a preference type con, but the gameplay speed is a bit too fast, I think the best speed of the game is Slow.
8. Some player models look like they've been imported from Gears of Wars. Shoulders and chest area too big. Not noticeable much during gameplay but ruins the immersion in cutscenes.
