It can keep longer and it is also easier to buy. Leafy veggie like Sawi, if you keep it open with nothing to cool it or damp it sure layu already. Long beans are dry, also easy to buy and keep without a fridge. it can last a few days longer than sawi if you do not cut it.
Actually, just pluck lah. I ask people if I can take some leaves, people's plants summore and they let. I even go cut people's opuntia cactus....
There is already a list of veggies for stars... it is up to you to research. Already mention sawi and there are many kinds of sawi. Romaine lettuce, Sweet Potato leaves, collard greens if you can find this, endives.... but the best is giving them sawi, hibiscus flower and leaves and also opuntia cactus. Kangkung once a while is ok, but not everyday.

They are land tortoises, rarely they find water holes to soak in if they are in their natural habitat. They do not enjoy high humidity as well. If you fear it doesn't drink enough water, then you soak your star yourself. I normally place my star in a bowl that has an inch of water since my star is big. If he wants to defecate, he would do so.... if he wants to drink, he would do so. The whole time he drinks and defecate, I would be watching so I know when he is done, I just take him out, wipe him dry and put him back in his enclosure.
