for jusco/aeon supermarket it is considered as grocery when i used my ocbc tmc last time for the 5%. i think it depends on which aeon and which counter too.

the 5% is being deducted after you key in your mbb cc number upon checking out right before payment. if no 5% deducted, then something is wrong (most probably wrong link) so don't proceed to make payment.

yeah, if you do it in weekends, you can get 7%+5%+5xtp. 7% is if you are using platinum cc.

if your outstanding balance is lower than your statement balance, then it should be because you received your cash cashback or cash awards, or because you have some refunded amount from merchant due to your earlier dispute?
