There is only 1 brake reservoir for CRZ, which is located on the left side if you are facing the engine bay. The other smaller one, closer to the air intake box, is the clutch pump reservoir.
CRZ does not use hydralic fluid for power steering, it uses EPS.

Yes that is fine, as long as the level does not fall below Min, and that your clutch does not slip during driving.

I used to have a set of Nashin 4-pot monoblock kit, it comes with SSBH and matching one piece rotor 330mm, and of course the brackets. I'd prefer one complete set by a manufacturer, as mix and match by ourselves from different parts is sometimes a hit and miss, especially if we do not know the full technical specs of the calipers. For example, some calipers are not meant for large surface area rotors, causing some rusts on the surface of the rotor where the brake pads do not rub.
Then again, I have seen good examples of DC5 calipers being fitted into CRZ (don't think FD2R can fit), so it may be all up to the mechanic. Just make sure the bracket is done properly, as it is among the important element in the brake kit.

The backet is what holds the calipers at the preset distance from the wheel hub to ensure that there are sufficient clearance to clear the rotors and not to touch the rims, while just enough for the brake pads to grab the rotors.. Each car has a different bracket, and it has to match with the rotors, caliper depth, offset etc etc...
