Did you tried mounting the phone into something? Say, a small tripod?From the video, if you're holding the phone on the table and using a finger to maintain the balance then yes, the phone itself will get some vibration hence the OIS kicks in and for sure you will see some shaking when zoom (digital zoom at that).
When using a DSLR to take a timelapse/long exposure shots, the photogs would usually use a remote because you cannot trust your hands and the holding the shutter tend to gives in some shake hence it would be wise for people to mount their camera on a tripod, frame the shot, use a remote to trigger or use timer.
