Once on 4.3... I don't think there's any safe way to root the phone without triggering Knox.

My previous S3 got no lag at all after debloating.
Further more...KitKat 4.4 is coming that is good for phone with smaller RAM.

Open your Gallery and let it built up the thumbnail cache first.
After that..it will open very quick without problem.
